Refrigerator Pickles | Zesty Bread & Butter and Dill

  • Calling all pickle lovers... having these recipes in your arsenal will change your life! So delicious made with garden fresh ingredients. Will last in your fridge for up to 3 months.
    Zesty Bread and Butter
    2 c. Apple Cider vinegar
    1 1/2c. sugar (for a sweeter pickle use equal parts sugar and vinegar)
    1 T. canning & pickling salt
    2 t. yellow mustard seed
    2 t. red pepper flakes
    1/2 t. tumeric
    1/2 t. celery seed
    1/4 t. whole cloves
    1 jalapeno and banana pepper seed
    6 cloves of garlic
    1/4 each sweet onion, red bell pepper, green bell pepper
    ~6 pickling cucumbers
    Simmer 3 minutes or until salt and sugar are dissolved. To a hot quart jar add 1/4 t. Ball Pickle Crisp (1/8 t. for pint jars). Tightly pack veggies and add brine. Cool to room temp. Store in fridge up to 3 months.
    Dill Pickles
    2 c. Distilled white vinegar (5% acidity)
    1 c. water
    1 T. canning & pickling salt
    2 T. sugar
    1 T. dried minced onion flakes
    1/2 t. each whole cloves, whole all spice, whole peppercorns
    Simmer 3 minutes
    To a hot quart jar add 1/4 t. Ball Pickle Crisp (1/8 t. for pint jars), add 1 head of fresh pickling dill and a few sprigs, tightly pack ~3-6 pickling cucumbers depending on size, and 4 cloves of garlic. Add hot brine. Allow to cool to room temp. Store in fridge up to 3 months. All to sit 1 month before using for best flavor.

    Hello Ma'am.... I want to thank you for this recipe. I've just made 4 quarts. I've never done a recipe that I love looking at more than the anticipation of eating them. They look absolutely beautiful in the jars. Every time I open the refrigerator, I just smile. I did a sneak test of the brine by dipping a raw cucumber chip in it and it's wonderful!!! I'll give the pickles a few days to meld together before I crack open a jar, but THANK YOU... .THANK YOU... THANK YOU. Great recipe job, Ma'am. I'm subscribing and following you faithfully.

    The bread and butter pickles are soooo good!! I have not had much luck canning pickles because all mine get soggy. I will stick with these refrigerated pickles from now on!

    I have made gallons of refrigerator dill pickles. My family loves them but I got lazy when my kids left home. Mine have lasted way longer than 3 months in the fridge. Russians pickle many things in the fridge and they keep months if not years. I want mine to be crisp and crunchy. I am making dehydrated pickles as a stocking gift but am finding the store bought dills have a weird aftertaste when dehydrated. So back to my homemade to see if they dehydrate and taste better. Just bought two bags of pickling cucumbers. Hopefully your video can help me make them
    even better. Planning on cutting off the blossom end and using pickle crisp. I pickle in gallon jars.

    Hi Carol, I made the refrigerator bread and butter pickles today and they look so good!! The brine smelled heavenly also. I don’t know how long I’ll be able to wait to get into them. I want to make your pimento cheese. I used some red bell pepper also and used probably more of those than your recipe.
    Thanks for another of your wonderful videos, I really enjoy them.

      Debbie altman I haven’t ever pickled beets. I’m not a fan of them although my husband loves them lol. Maybe I should consider doing a batch just for him 🤔😍

      I love pickled beets. I remember my parents making at least 10-20 quarts, depending on how well they grew in the garden. My dad also put two boiled eggs in each quart. Yes pickled eggs are great.
      I haven’t made refrigerator pickles in a while. I need to make a few.

      This is not a tested recipe for canning. You would have to follow a recipe intended for canning
