  • If you think of scallions strictly as a garnish or seasoning, you’re in for a rather life-changing surprise. Because, once you know their secret, you’ll be able to cook them as a fresh, sweet green vegetable to pour, still-sizzling, next to creamy beans or crisp chicken or scrambled eggs-in just five minutes and barely having lifted a knife.
    This week Kristen has a Genius Recipe doesn’t end with “salt to taste.” In fact, you’ll see the last line specifically says, “No salt or pepper will be needed,” the graceful words of the late Southern cooking champion Edna Lewis.     Kristen has maybe my favourite recipe presentation style of any CZcams food media I've seen (yes including BA). Love your curated recipes and the straightforward, no BS style they're presented in. Every video is a relaxing joy to watch truly.

    Kristen, You say that Edna has a soothing voice. That is what I have always felt about you and the way you present. When I was a young mother like you are now I would watch Mr. Rogers with my daughter because his soothing voice was very de-stressing. Your manner is in the same league.

    Edna Lewis wrote for Gourmet in the 1970's , always a pleasure to read her memories of Freetown, and her recipes that centered on seasonally available ingredients. She was a writer and cook, who epitomized the value of style and substance, as integral to each other.
    Love the videos! Kristen you've probably not been called charismatic, but you are that. The setting with your husband and your daughter are just a pleasure to watch. The unpredictability and immediacy are winning!

    I made these last night as a side for grilled salmon. Usually I grill the scallions, however this recipe produced a much better result. So succulent. They were a perfect accompaniment, I just didn't make enough! But I have been planting scallion ends for awhile in my garden and they grow like weeds. This will be an ongoing side.     I didn't know that scallions could regrow like that, that blew my mind more than the recipe! Which is so simple that I'm going to try it regardless. Like sourdough starter pancakes, food that just regrows is pretty much the most exciting thing during these times. Which could be topped by sesame seed and... scallions! Another use for scallions is in a falafel dough, instead of, or even with parsley or koriander. I've seen it used by a Lebanese place once, and never looked back ever since I tried that.

    This is exactly the recipe I was looking for. Well, I wasn't looking for it exactly, but finding this video was definitely fate.
    I cook my green onions almost like if I were trying to do a single ingredient stir fry. It comes out... alright. I guess I was just making too hard on myself! These hit exactly the flavor I was trying to get! Who knew it was just a matter of covering it, waiting, and holding the salt.

    I do clean my scallions this way. I actually leave the peely bits on and trim them off with the roots.

    What is the difference between using a skillet or heavy bottom frying pan? I don't have a skillet, but I do have a heavy bottom frying pan.

    I usually cut the ends by the sink & then clean them. Tried regrowing & sadly forgot about them, yuckity yuck 😆 Will try again tho! For some reason I’ve used SO many scallions lately. Looking forward to making this recipe.

    I will start to caramelize scallions in excess oil and save the oil too.

      @Kristen Miglore... Although my uses of my stored flavored oils a fairly varied... I always seem to find new ways to integrate those flavorings into new dishes that compliment each other. The tumbler in the video is the one I use daily.

      Carlene Lewall I’ve seen places that actually recommend it after a while (or in dirt in a container on the windowsill), because the onions become less hearty eventually.

      I just plant them directly in the garden and avoid the water trick and they grow up within a few days. Those roots are there already and they love soil.

      @Kristen Miglore I made this last night for dinner and it was a hit. The green pepper thing coupled with the scallions are such a hit. Simplicity at it's yummiest.
