When he finally kills the guy he has 97 arrows left. 383-97 = 286 arrows fired. 2.2 seconds per arrow gives 629.2 seconds which is 10 minutes 29.2 seconds. So dunkey spent over 10 minutes shooting at this dude to make the fight easier.

My guess is they took it out is cuz the climbing in Demon's Souls was only used in a couple of places, the fact that it exists kinda gives the player the idea they could do the climb thing just about anywhere it makes sense. However, the game never really makes it clear when it can and cannot be used so it kinda just confuses the player. Also, the shaded ruins thing is awful, dunno how no one questioned that during development.

Fun fact: it took not 10hrs but 10mins to shoot down the boss with the bow and arrow. He fired 1 arrow every 3 seconds. He shot ~185. Thats 555seconds/9.25mins. If he was to take 10hrs, he'd need 12, 000 arrows in his inventory, which would exceed the weight limit by 1050% with the ring of gr8 strength on, and it'd give Sir. Donkey the equipment burden effect.
