"Cucumber soup" is originally prepared from lactic-fermented pickled cucumbers. No vinegar - only naturally fermented cucumbers, no extra acid. This is important because many people think that these are the same cucumbers as those fermented in vinegar - no, and it will never be the same. Fermented food has been known and liked in Poland for a long time.
Should be called “ pickle soup” , my favorite.

There is no such a thing as fermentation in vinegar. When you put something in vinegar you just pickle it, fermentation requires microorganisms and salty conditions and typically no vinegar (in case of lactic fermentation, other types of fermentation may require vinegar at the beginning, still tho - a different process)
Exactly. Polish cuisine has cucumbers in brine, not pickles.
Cucumbers in brine: cucumbers are placed in brine (salt and water) and left for bacteria to process sugars present in cucumbers into lactic acid.
Pickles are made by adding vinegar (acetic acid in water) to cucumbers.
Taste of cucumbers in brine and pickles is very different.

My mom was born in 1949 and she still makes this exact food to this day. It's on a different planet how good it is.
Poland has the most varied types of soups in the world. You should come to Poland to visit and try many other delicious dishes and cakes. And by the way it's beautiful, clean country with friendly people.
My favorite is pickle soup, flaczki, barley soup, sauerkraut soup, fasolka po bretonsku.
There was a cookbook in Poland with 2k recipes from Kresy (eastern part) for soups only.

Jestem z Polski, to nie zupa z pikli tylko z kiszonych ogórków. Pikle są w zalewie octowej a kiszenie to naturalny proces. Zakwasy na żurek i barszcz czerwony również są z kiszonych zakwasów. Mamy pyszne jedzenie, bardzo urozmaicone, sezonowe. Polska to nie tylko pierogi, żurek, bigos a wiele, wiele przepysznych potraw. Przyjeżdżajcie próbować!🙂

No , it’s not a poor imitation. Jewish , German , Ukrainian , Russian cuisines are almost identical. Every one of them is good and dishes are similar in taste.

Ukrainian, Belarusian and Lithuanian cuisines are the most similar to Polish.
Jewish cuisine is very similar. It does not have pork dishes though.
German cuisine does not have bigos, and many other dishes shown in video, but has similar sausages, bread, ...
Russian cuisine does not have that quality. It is just poor imitation.

My polish grandma (all slavic grandmas) can make soup from everything.
My grandma making nettle soup and at cold winter she is drinking nettle tea every day.

Your past couple of videos have really hit my childhood. My Grandpa is Ukrainian and passed away last year. The pierogi and potato pancakes were staples at his house.

I love pickles!!! My best friend's mom was Polish. She use to make all these foods for us all the time plus other amazing dishes. She passed about 20 years ago. Seeing you enjoying all these dishes brings back so many great memories. Canadian Polish here, I can make most of these dishes from scratch, some of them take several hours, but well worth it.

Im not from poland but my family (here in US) always called Gloabki (stuffed cabbage) Halupki instead do you know why maybe a different region?

@@HoleshotKFX400 yes, halupki is a dish from the Slovak region of Eastern Europe...I haven't tried it, but it's almost the same as cabbage rolls. 😊
My favorite is Polish fresh Wedding Sausage with garlic with some Polish Wedding noodles as a side dish. My folks loved Kiska,Kvass which is beet soup. They also liked Duck blood soup. Forgot how to spell it but something like"Charnina"

Kvass is a fermented sweet drink (soda), looks black like coke. Beetroot soup is barszcz or botwinkowa (those are two different ones).

The cabbage roll is called Golumpki , in Omaha, Nebraska we have a polish festival that thousands come to and we drink over 110 kegs of beer! Polka dancing, eat perogi and golumpki, and traditional Polish desserts, it's a blast
It's gołąbki (with just English letters, golabki, but yeah, the ą sound is a bit similar to um, though un would be more fitting). But nice to hear about the festival, I bet it's a lot of fun

Culturally we are Slaves so culturally we are Eastern European as well. @@PERUN319 I understand the anti Russian bias is stron but historically speaking Polish western boarder was put eastwards to the point that city of Kraków was in the South Eastern part of the counry while now is in the south Central part. Further Poland pre WWII eastern border run along the river Zbrucz which is currently in central Ukraine. Polish Lithuanian Commonwealth borders went even further east and covered the entire country of Belarus over 90% of modern Ukrainie and in some periods stretched all the way to the city of Smolensk. I will recommend you to take a look at the map again before you say something. Further culturally speaking Poles are Eastern Europeans linguistically as well, culinary by all means. Further when you actually look at the distance from Warsaw to Lisbon over 3100km and compare it to the distance from Warsaw to Ural mountains the eastern border of Europe 2400km and factor the distance from Warsaw to Berlin 500km you will see that most of the country is in Eastern Europe. Further as a Pole I consider myself eastern European so be kind enough and stop .

What you have there is all delicious. Never been to Poland but have had some polish food. Lidl sometimes have Polish food as their featured national food so I've bought it. Yum.
Well, I would try to make potatoe's pancakes by myself.
They are really easy to make. But first of all you to have have... really good potatoes. I visited States. People were soooo frendly 🤗, and the landscapes toke my breaths away, but food..🥺😱😓.
Potatoes and other vaggies tasted like nothing.They weren't bad, reallly not. They all had the same taste of... nothing 😲.
The same problem is with cucambers and tomatoes in Netherlands. It's because hydrophonic's way of agriculture. Sorry if i have made a mistake with the difficould names.

Oh my gosh this makes me miss my grandma. But definitely makes hungry. 😋 stuffed cabbage is one of my favorites. Love having polish and Irish roots. Best of both worlds growing up homemade food wise. 😁 I love mixing my beets with mashed potatoes still too this day. 😋

Great job finishing that challenge Joel! My mom's mother was Polish / American and my mom cooked a lot of those foods growing up. I didn't like the cabbage in the cabbage rolls or eat it much and I don't like sauerkraut very much either and my mom made kielbasa and pork roast with it. I've never heard or eaten beat or pickle soup though

I absolutely adore beets in any form, especially a chiogga scored 4 tmes in top then drizzle some olive oil on top of the cuts. Wrap in foil then grill, or even better put in a small bed of campfire coals. Sweet, nutty & hard to describe but definitely delicious. Would try that pickle soup in a heartbeat. I live in an area with a lot of polish influence… we feel sorry fo those who’ve never had a homemade pierogi!!! In fact we have a whole festival dedicated to them! Farmers cheese is probably my favorite… deep fried pierogis are exceptionally tasty… you can even get dessert ones!!! This must have been an expensive meal!!! Maybe they gave you a little deal for the free advertisement…

I grew up on potato pancakes they are delicious! I love fermented pickles I now make my own fermented pickles in the fall, very easy to make. Another favorite polish dish of mine is kapusta! 😋

There are two groups in Poland arguing which way of eating potato pancakes is better. One eats potato pancakes like you did - with sugar, the other eats them with salt ( or goulash or sour cream and smoked salmon for example). I am personally a representative of the second one. You should try them in the salt way:D
I've never had Polish food I've always wanted to try stuffed cabbages. I like that you are eating different cuisines of food from different parts of the world. You really need to try Filipino food they make really good food

In Poland you start with Soup or Stew and then you go for more solid dish like Potato pancakes or Pierogi. Bigos (or hunter's stew) is usually eaten with slices of bread.
