How much stability did the GoPro have? I've always thought of creating a parachute myself, but I don't have a max, so no 360° footage only 2D. Do you think it could work the same way?

The stabilisation on the GoPro Max is incredible!!! You can really tell if you go watch these videos.

360° is really a must have otherwise there's no way to control what the cameras looking at.
