    દૂધી ની એક મજેદાર પૌષ્ટિક અને સ્વાદિષ્ટ અને નવી જ રેસિપી
    Dudhi Dhokli shak... Lauki and dhokli curry recipe
    The detailed procedure with ingredients to make:
    Bottle Gourd And Dumplings Curry / Dudhi (Lauki) -Dhokli / દૂધી ઢોકળી
    As below.
    Total serving: 5 - 6 persons
    Total 700 gram Lauki/dudhi is used
    (A) Vegetable for Dhokli
    • 1/2 bowl Grated Carrot (Water squeezed)
    • 1/2 bowl Grated Cabbage (Water squeezed)
    • 1/2 bowl chopped Palak (Spinach)
    • 1/4 bowl Grated Lauki/dudhi (Water squeezed)
    (Squeezed water to be added in gravy)
    (B) Preparation of Dhokli
    • 1 small bowl green garlic (seasonal)
    • 7 cloves of garlic and 2 green chilly (crushed)
    • 1 bowl green coriander leaves
    Mix all the above vegetables
    and add 2 bowl of wheat flour and 1/2 bowl of gram flour
    Add to it following
    • 2 spoons red chilli powder
    • 2 spoons coriander-cumin powder
    • 1/2 spoon turmeric powder
    • small pinch of Asafoetida and salt to taste
    • 1 spoon of sugar
    • 1/2 spoon Saji na ful (soda bi carb / Khava no soda)
    • 1.5 spoon of oil
    • Juice of 1/2 Lemon
    -- Knead and prepare dough from above (Thepla type)
    -- And prepare dhokli as a desirable shape from this dough
    -- Cook dhokli (in two parts) in a Microwave for two minutes OR It can be cooked like dhokla with a steamer
    (C) First Tadaka (vaghar)
    • Heat 3 spoons oil in a kadai / big vessel like a cooker
    • Add cumin seeds and curry patta when oil is heated
    • Add remaining Lauki/dudhi (cut into small pieces)
    • Add salt to taste
    • Add 1 spoon of turmeric powder
    • Mix well, cover it for two minutes and let it cook
    • Add 2.5 glasses of water and cover it
    • Once boiled add cooked dhokli in to it
    • Add squeezed water of vegetables
    • At low flame cook for 10 minutes
    (D) Prepare Green crushed masala
    • 1 Red chilli and 1 green chilly (Or two green chillies)
    • 5 cloves of garlic, little coriander leaves
    • Crushed all above in mortar-pastel (coarsely grind)
    (E) Second Tadaka (vaghar)
    In one Kadai
    • Take 3 spoons of oil
    • 1 spoon of mustard seeds
    • 1 spoon of cumin seeds
    • 3 dry red chillies
    • Small pinch of Asafoetida
    Add Green crushed masala prepared as above
    Sauté for 1/2 minute on low flame
    Add
    • 2 spoons Red chilli powder
    • 1/2 spoon garam masala
    • 1 grated tomato (or tomato puree)
    • 1 spoon of sugar
    • 1/2 spoon Aamchur powder (mango powder)
    • 1 spoon Kasoori methi
    • 1/2 lemon juice
    Mix everything well
    Add this Tadaka in cooked Dudhi
    Add 1 spoon of coriander-cumin powder
    Mix everything well and keep for a minute on low flame.
    Sprinkle coriander leaves and serve.
