    I love watching the America Testing Kitchen and Cook's Country, and the cast. I have learned a lot and have shared what I've learned with family and friends.
    I am looking forward to learning more recipes and what better cooking gadgets to use to make cooking more enjoyable.

    My family agreed this is the best chocolate cake I ever made. Thank you for the details on watching the temperature of the fudge, because it took a bit longer for mine to reach 235°, and took a LOT longer (hours) for it to cool down to 80°.
    I know it's not traditional but I made it in 9" rounds for a traditional birthday cake shape (they needed another 5 min in the oven for a toothpick to come out clean). I followed advice I read elsewhere to let the cakes fully cool and refrigerate them before frosting, and also to make everything a day in advance because it gets better with age. I don't know if that's true, but it's what I did and it was easy to handle and tasted amazing!

    Made today. I messed up the first cake. So I started over. One of my layers needed more time to cook. The frosting is time consuming but oh so worth it! This cake is amazing! Thank you for posting this video! I watched it several times!

    I made the cooks illustrated emergency chocolate cake this morning. Very simple since it uses mayonnaise in lieu of butter and eggs. Turns out great every time.

    My sister-in-law and I tried this recipe for my brother-in-law’s birthday. The cake was awesome. We did have trouble making the fudge frosting. We refrigerated the fudge, but it softened quickly at room temp. We frosted the cake anyway and refrigerated the cake again to set the frosting until we took it out for the birthday reveal. Altogether, the cake was full of chocolate flavor, not dry, and had a lovely crumb. The frosting was decadent and complimented the cake perfectly.

    I realize it's not part of the traditional recipe but I'd add coffee to the cocoa instead of water....the cake looks amazing!

    I know the rest of the workers there was glad to get a piece of that cake and loved it like I would. I am not a baker and loved to eat the food cooked at the base I was assigned to before retiring and getting to taste test both the regular food dishes and the desserts as well. I was always full and so was one boat shop owner's security dog who was my constant companion when I wasn't at work because I always brought him some of the food home from the kitchen which was my part time job.

    This recipe is great! For anyone complaining about the thumbnail.....
    Go to their channel, look under videos, scroll down a week ago (Nov 4th) and you will find the chicken and pastry recipe....
    If that's too much trouble, you probably don't really want the recipe 🤔

    Used 100% LINDT cocoa bars, melted in microwave. Darker color, still tasted GOOOOOOD . This cake tastes like what you would expect a choc cake to taste like. Have plenty of milk on hand. 😋💕😊

    When blooming the cocoa , could you use hot coffee to enhance the cocoa flavour as in other recipes, or would that change the flavour of the cake too much?

      The old fashioned cake recipe my mother gave me (she's 94) uses cocoa bloomed in coffee. You don't taste the coffee but you get an even deeper chocolate flavor.

    Do you really need all that sugar, 2 CUPS? The icing is that Cardiac Icing (so sweet it might give you are heart attack or stroke)! There was a time when I could eat this but now, I have to go out and exercise something crazy to burn all that excess sugar and fat up.
    Have to slow down on these rich rich rich rich desserts. But it still looks yummy.

    Have you ever put both eggs in at the same time? Does mixing them in one at a time really make a difference?

      Adam Cravets yes it does make a difference, as both eggs at the same time can result in clumpy separation of egg and butter rather than an emulsion. And that does affect end product texture and look

    Cake-2 CUPS of sugar
    Frosting-1 and a half CUPS light brown sugar, 3 CUPS confectioners sugar.
    =6 AND A HALF CUPS OF SUGAR IN THAT 8 INCH SQUARE 2 LAYER CAKE. I'm sure it's good, just too much sugar to even make a test cake. I will just do a cold run of it before grandkids come over. 😁

      Bittersweet chocolate tends to have a little less sugar than semi-sweet, but they're very very close, so you can generally substitute one for the other.

    What does ‘blooming the cocoa’ mean?

      Brie Sullivan to bloom cocoa it means you add the dried cocoa powder to a hot liquid such as water or coffee. What it does is give extra time to dissolve the solids and allow the chocolate flavor to come out of the dry powder even more, unlike mixing into your dry ingredients then quickly mixing 8nto wet and immediately baking.

    I love these girls cooking , but this Wellesley fudge cake ,
    to fudgy and could still taste bitter sweet choc and after 3 cups confectioner sugar,
    to much butter also made my hubby stomach
    you better like fudge a lot for this cake
