With those foam inserts it seems like getting the one side to get the bead into the center of the rim would make things difficult for mounting the tire.

look up basso palta
It is not a dream build if it is with disc brakes. Disc brakes ruined the look and the aerodynamic of the bicycles.
its gravel/off road, discs are better for that. (rim for road!)
Disc brake in gravel bike is foundamental !!!!! Ps : even in road bike disc is better , the future .
