One of my all time favourite dishes growing up as a kid in a cantonese household. Over the years Iâve made many versions of this classic, and itâs at finally at a reiteration where Im really happy with it and yet still super simple to make.
Recipe:
3 medium tomatoes (350-450g)
20g ginger (sliced)
3 cloves garlic (minced)
1/2 small onion (diced)
3 tbsp oil
1 tbsp sugar
1/2 tsp salt
1 tbsp rice wine
1/2 tsp chicken bouillon
Pinch white pepper
Cornstarch mix (1tsp cornflour + tbsp water)
Egg mix:
6 eggs
1 tbsp sugar
Whisk the eggs and sugar well in a bowl
Oil your medium-high heated pan with 2 tbsp oil and scramble the eggs until 80% cooked, set aside.
Add remaining oil and fry aromatics on high for 1-2 min, add tomatoes, seasonings, rice wine and cook for further 3-4 mins. Add in the thickening cornstarch mixture, turn off heat.
Mix in the egg and serve as a side dish or over steamed rice.
