I would have definitely asked to speak to the manager about that lobster tail being overcooked. He would have been able to see it and should have either brought you a new one or taken the charge off the bill. With the prices of food/eating out in today's economy, you need to get the value out of what you ordered especially at a so-called, top tier, name brand, steak house such as Ruth Chris. Lobster is too high priced and a specialty item which cannot be done wrong.

The only real issue I could see is the back kitchen possibly spitting or worse while fixing you a new dish. That is why I also said have the charge taken off the bill because I don't think I would trust sending plates back and then eating what comes out.
It all depends on what your order. The smaller fillets are more tender. Their Cesar salad is fire the croutons melt in your mouth and the dressing is freshly made.I usually get a fillet with a Cesar salad and mushrooms with a spicy Bloody Mary. Hits every time.
