Ingredients -
2 1/2 Tbsp (50ml) - Vegetable Oil
1.2kg (2.6lbs) - Chicken Thigh or Drumsticks, Bone in & Skin on
1/4 Cup (30g) - Plain (All Purpose) Flour
400g (14oz) - Swiss Brown (Cremini) Mushrooms, Quartered
1 - Brown (Yellow) Onion, Large Dice
1 - Carrot, Large Dice
1 - Celery Rib, Large Dice
1 - Large All Rounder Potato (Russet or Yukon Gold), Large Dice
4 - Garlic Cloves, Chopped
2 Tbsp (28g) - Unsalted Butter
3/4 Cup (180ml) - Dry White Wine
1 3/4 Cups (420ml) - Chicken Stock
5 - Sprigs Thyme, Fresh
4 - Bay Leaves, Dried
3/4 Cup (180ml) - Thickened (Heavy) Cream
Seasoning To Taste
Flat Leaf Parsley, Garnish
Method -
1. Place the chicken thigh or drums into a bowl and add flour, salt and ground white pepper-dust well to coat.
2. In a large high-rimmed pan or pot over medium-high heat, add vegetable oil and once hot, add the chicken and sear for 3-4 minutes on each side or until golden and the chicken skin has started to crisp. Remove from the pan and repeat any remaining batches. If the pan gets too hot, lower the heat slightly.
3. In the same pan, add a splash of vegetable oil and the mushrooms and saute for 6-7 minutes or until the moisture releases and the mushrooms are golden and slightly soft. Remove from pan and set aside.
4. Place the pan over a medium-high heat. Add the unsalted butter, onion, carrot, celery and potato and saute for 5 minutes, mixing regularly. Season to taste. Add the garlic and saute for 1 minute. Deglaze the pan with white wine and bring to a boil. Cook for 2 minutes or until reduced by half.
5. Add the chicken stock, thyme, and bay leaf to a bouquet of Garni, seared chicken, resting juices, salt, and cracked black pepper. Bring the sauce to a boil, reduce heat to low, cover with a lid and cook for 20 minutes. Remove the bouquet, Garni.
6. Add the mushrooms back in along with the thickened (heavy) cream. Mix well and check seasoning levels. Cook for 5 minutes over medium heat or until the chicken is cooked. Remove from the heat.
7. Serve the chicken and mushroom stew with crusty bread or mashed potatoes. Garnish with flat-leaf parsley. Dig in.

Looks wonderful BUT ... who wants to eat a stew with bones in it?? Cut the bones out of the chicken but leave them in the pot while browning the chicken so you get some more flavor. But ... don't put them into the final stew mixture. Only Heimlich would approve of that maneuver! 😀
@@gmg1985 a lot of stew recipes have bones in them. Each person has individual tastes though so you do it how you like, me personally would probably do it either way, bone in or bone out. Price often is behind the choices I personally make

Did it! Super tasty. Quite a bit of work, prep and clear away.(Used two pans to get rid of the oil to sear the chicken breast). Added a knob of butter for more colour. More of a weekend meal if you work. Did for 4 people who were very pleased. I think this may become a CJO’s classic.
