      Touching the face is actually kinda dumb for testing rarity. All steaks are different and everyone's face is different as well. It dont something I think inexperienced cooks should do. I'd recommend a meat thermometer or touching the steak before and after its cooked

    My great grandfather served in WWI and was a butcher. My grandfather served in WWII and was also a butcher. I wanted so badly to be a butcher and to be the only one that followed in their footsteps. It's just a dying breed here in the states. They were butchers in Rome Georgia. My parents moved us to Florida when I was 3 right after my grandfather died so learning anything in that field would have been impossible. Oh well, would have been cool to make them proud.

      I have a question. I'm from Florida which has a supermarket called Publix. Publix has a meat section, where the meat is cut daily. I looked a bit further in, and Publix doesn't refer to the workers here as butchers but "meat cutters". Is that the same thing? I looked at the requirements and it days that the person had to be experienced in Publix Meat Cutter Apprentice (or something like that), and should have an understanding of a variety of meat cuts, as well as be able to provide a customer with information or a specific cut. That sounds like what a butcher would do, but I once read somewhere that butchers and meat cutters are different professions. That butchery requires years of training, but meat cuttery can be learned quickly on the job.
      If anyone has some better information, our article, please let me know or send me a link.

I worked as a meat manager for the Kroger company for 8 years grocery stores classified us as Cutters because we do not break down the entire animal we are given sides and pieces to cut . Bleachers break down the entire animal and then the sides then cut those individuals pieces into cuts to sell.... If you look on CZcams for Don the comic book junkie he's actually a Publix meat manager in Florida

    The difference between a butcher and a supermarket is, in a supermarket you only get to choose from what they have, if you go to a Butcher you can order in specific cuts, i dont want what supermarkets offer i mean a 8 ounce steak? whats that?......i'll go the butcher and ask him to get me two 20 ounce Ribeye steaks on the bone, order them in and go back in 3 days, when they come you have fantastic local produce, try getting that at the supermarket!
    The other thing is when you buy from a butcher you are helping 1 man feed his family, when you buy from a supermarket you are helping multi millionaires with 6 yachts stay as multi millionaires with 6 yahts! ....You gotta have some morals!

    I love it when Gordon is on shows that don't depend on him screaming at and insulting the people he is working with. Which honestly seems to be the majority of shows he is on that aren't filmed in the United States... Its kind of sad that to make a show successful here, you need to have a constant stream of drama and insults, rapid fire editing, made up drama, and some conflict advancing the plot every 5 seconds so the average viewer with a 3 second attention span doesn't loose the plot and switch channels. God forbid we have a show where we see Gordon actually teaching people who WANT to learn and improve! I mean hell, why would us Americans want to see an actual quality cooking show when we can see Gordon screaming about the Risotto being raw and kicking all of the chefs out of the kitchen?!

Sometimes we will buy half a cow off of our neighbor who raises them or when it's deer season I can hunt to get some fresh venison. For all the other times tho, the only place to buy meat is from Piggly Wiggly or Wal-Mart

    That's my favorite part of the neighborhood is hitting the meat shop around the corner. Great team that knows their work and great quality at a better price than the supermarkets. Living in the fishing capitol of the US is great, but when you rely more on your butcher than your fishmonger, no econo-super-extra-value-chain supermarket will ever do.

    butchers are one of the best kept secrets in cooking far better quality meat in a butcher shop. you can get cuts of meat you don't get in a super market and they have far more variety of meat. and the absolute best most fine meat out there.

      They did ALL WRONG!
      1. Season your steak.
      2. Heat up the cast iron skillet.
      3. Throw in a nice pat of butter-NOT OIL.
      4. Let the butter burn until it turns brownish black and is smoking.
      5. Gently lay your steak with tongs in the hot skillet to sear for a minute or two depending on the thickness.
      6.Flip steak and sear the other side for a minute or two depending on thickness and how done you want your steak.
      7. Put finished steak on a plate and let sit for 5 to 7 minutes to let the juices set in the meat.
      8. Eat that steak. Mmmmmmm.
      Now im hungry for a dry aged ribeye...

      I am in apprenticeship as a butcher, and I can definetly recommend it. I started in august, and have been working and learning for almost half a year. My education takes 3 and a half years. So I got about 3 years left now.

      We have the exact same problem in Denmark. Just in 2018 the shop butchers has closed 18 shops around the country due to the lack of educated butchers and the supermarkets dumping the prices. Im a educated butcher myself and im enjoying the work side of things. But the supermarkets keep dumping the wages aswell so its pretty hard to get a decent wage as butcher in Denmark

    We have something called Broward meat and fish in florida. There is a fish market and a butchery. Along with various Caribbean food products. It's nice to get your food from a place like that.

      Uhhhh no its not it's about the same or cheaper. In fact you can negotiate with a butcher and if you see them often they give you discounts as well. Not make up things you never even been too lol.

      +Nick Masayekhi Sadly true for the most part, but there are cheap cuts you can get from a butcher that you usually can't find in most supermarkets. I just bought a kilo of quality beef cheeks from a local butcher for a fiver. Happy days! It would suck to lose them.

      +Nick Masayekhi I get 5 KG of chicken breasts from my butcher for 30euro. would cost close to double that in a supermarket.
      When you go into supermarkets everything is packaged and priced so customers know exactly what they are getting.
      Walk into a butchers and its very confusing for somebody not used to it. Butchers need to figure out ways to convey prices of items to customers in a better way.

      Dragonblaze butchers should be a job like waiters imo, an available job for teens to practice and those with a knack will stay and become masters of their art.

      I don't know any master waiters, only ones that failed to get a career.
      As for butchers, I'm torn on the idea of it being an entry level job for teens, on one hand I want to make sure we have good butchers and not low quality cuts done by inexperienced people, on the other hand it'd help to toughen up every teen, which is especially needed in the boys and girls of today, and it teaches a good skill to know in case you need it.

    We still buy from our local butchers because its much more cheaper than wrapped ones. And plus, we get some social points and we can haggle prices (if possible).
