One thing I’ve noticed when it comes to a chef showing/teaching an athlete vs a comedian or someone along those lines is this...The athlete actually listens and tries to do their best with what they’re being shown. Their dedication to their own trade reflects in the respect that they give the “coach” being the chef.

Gordon forgot to mention that you must allow if you are in a rush at least an hour for the meat to sweat so the seasoning can soak into the meat. They did a fine job but didn't explain why more seasoning. The reason is you lose 65-60 percent in the seasoning once you lay it on the skillet. If you let it rest in the fridge over night? You will take each bite like heaven. Allow time for the season to work its magic but that was a big concern about this video from Gordon. Just because he is famous doesn't mean he isn't half ass doing these videos. Sadly i seen his work lower through the years. He was actually the person who taught me how to cook (youtube that is) i love Gordon sadly it hurts to see things that i know should have been done.

He may just look like a pretty decent professional chef, but he is only utilizing around 3% of his power. Cook the fat.
After 10 min or when render, Add butter sauce. Cook with stove off no heat pan is hot enough, till fat almost done stirring constantly to avoid burning!
Drain all into blender fat and butter. Blend 10 15 seconds. Return to bowl.
Freeze Butter Sauce 7 min or until semi solid. Remove and mash/stir again, cover plastic wrap. put in fridge till steak is done. Butter sauce is finished.
Remove steaks let sit 15 min at room temp.
Re-heat grill on low till it reaches 400 steady.
Add each steak above the burners that are covered not in the middle between flames.
Cook each side 4 to 5 min searing sides between the flames before Flipping.

Plate steak. Top with shrimp (if required) then add butter sauce, spreading around entire steak.
    Plate sides.
    Enjoy.
