- Best Soft & Moist Butterscotch Cake Recipe - Since I did the eggless version last week, it’s fair I do the egg version this week. The different combinations with 1 egg 1 eggless, 1 round 1 square, 1 with buttercream, 1 with whipping cream. You can mix and match the combination you desire I made the cake with the butter cake style instead of sponge cake. I hope you’re inspired to try this one out. The taste with the butterscotch and praline is amazing! Enjoy!

Ingredients:
- Butterscotch Cake
I am using 7x7x3 inches square pan
185g (1 ½ cup) cake flour
½ tsp baking powder
½ tsp salt
200g (3/4 cup + 2 tbsp) unsalted butter (softened)
130g (2/3 cup) brown sugar
4 eggs (medium size)
1 tsp vanilla extract (I forgot to show in the video)
50g (1/4 cup) milk (room temp)

- Butterscotch Whipping Cream Frosting
420g (1 ¾ cup) whipping cream
80g (1/4 cup) homemade butterscotch
Instructions:
Butterscotch Cake
1. Preheat oven at 160°C / 320°F.
2. Sift all the dry ingredients. Set aside.
3. In a large mixing bowl, add softened butter and sugar. Use a spatula to smudge them to avoid the sugar flying, and switch to an electric mixer. Increase speed to medium and mix for at least 10 minutes. This will give a pale, creamy and fluffy batter. (a lot of people asked me why needed so long. This is the key to the success of this cake. If you don’t mix this part right, your cake will sink, that’s why)
4. Add in the eggs, one at a time. (this is another key to this cake)
5. Reduce speed to low speed. Add in the dry ingredients, spoon by spoon. (this is also another key to this cake)
6. Add vanilla extract and milk. Mix until fully incorporated.
7. Grease a 7x7x3-inches pan and line with parchment paper.
8. Bake in preheated oven at 160°C / 320°F for about 50 min
9. Cool the cake completely before assembling.
Butterscotch Whipping Cream Frosting
10. In a bowl, mix the whipping cream until soft peaks form.
Add in the homemade butterscotch sauce (for homemade recipe: • Ultimate Eggless Butte... ) and continue mixing until stiff.
11. Chopped the praline (for homemade recipe: • Ultimate Eggless Butte... ), half fine and half in chunks.
12. Assemble the cake.
13. Cake is ready to serve.

@@chaitraaakash6741 If you store in the fridge, you may keep it for about 2 weeks. I kept mine air tight and make sure not moisture vaporised in the butterscotch. It will last for even up to 3 weeks. The longer you store in fridge, it will be thickened up. Just pop into the microwave for few seconds to get the consistency you desire 😊

I just need to get some milk and the nuts and I'm set to make this. Don't know if it's the camera but those are some big med size eggs! I was sure you were using extra large eggs. I just made a authentic Italian sponge (two days in a row, lol). That recipe called for extra large eggs and a smaller size pan which I didn't have. Thankfully she gave us varied options to the recipe so many of us could make it. Questions. Can I use large eggs and a 9in round? I don't want to waste time and ingredients or $$. Please answer... thanks!

I think it is meant to be stored in an airtight container or cake stand with lid at room temperature

Hi may i use multi purpose flour instead cake flour and what is the usage measurement of it?
Measure out one cup of flour, then remove two tablespoons. Replace the two tablespoons of flour with two tablespoons of cornstarch. Do this for each cup of flour required in the recipe.

Yes you can use rectangular or even round. I don't think there are many choice of rectangular pan sizes. There is loaf pan 9x3x3 or 13x9x3. Just bare in mind, if your rectangular pan is much bigger dimension, you may need to top up the measurements. 😊
