Super Moist and Soft Thai Style Butter Cake Recipe

  • Thai Style Butter Cake - Few years ago I shared my butter cake recipe and many had good comments aobut it. Someone requested a Thai version. It may seem pretty similar but Thai version is much lighter and more fluffy in terms of texture. The regular butter cake can be more crumbly in terms of the cake texture. However, the Thai version is more dense but super soft and fluffy. I hope you’re inspired and give this cake a try. Enjoy!

    Ingredients:
    7x7 inch pan
    280g [2⅓ cup] cake flour
    4g [1¼ tsp] baking powder
    250g [1 cup + 2 tbsp] unsalted butter, softened
    200g [1¾ cup] powdered sugar
    5 eggs, room temperature***
    1 tsp vanilla extract
    180g [¾ cup] whole milk
    ***Egg substitute: 240g [1 cup] plain yogurt
    Instructions:
    1. Preheat oven at 160°C/320°F.
    2. Prep the pan and set aside.
    3. Slice the cold butter and place them in a large mixing bowl, and set aside until softnened before use.
    4. Sift the dry ingredients: flour and baking powder. Set aside.
    5. Whisk the eggs in a jug and set aside.
    6. Add the powdered sugar into the large mixing bowl of butter. Use a spatula to mix a little to combine so that the powdered sugar doesn’t fly when using the electric mixer.
    7. With the electric mixer, start mixing on low speed for a few seconds and then increase to high speed to mix the batter for about 4 minutes until creamy, pale and fluffy. Scrape the bowl occasionally.
    8. Add in the beaten eggs little by little while mixing the batter. Mix until the eggs are well combined.
    9. Add in the vanilla extract. Mix until combined.
    10. Add in the sifted dry ingredients in a few batches, alternate with the milk. Mix on low speed to combine, do not over mix. Scrape the bowl occasionally.
    11. Transfer the batter into the prepared pan.
    12. Bake in preheated oven at 160°C/320°F for 60 minutes or until the inserted skewer comes out clean.
    13. Drop the pan on the counter top to release air. Remove the cake from the pan and let it cool on the cooling rack.
    14. Once cool, you may slice the cake and ready to serve.

    Hi this looks yuuummm ❤ when you say powdered sugar is it icing/confectioners sugar or you just powder normal sugar

    If using all purpose flour what is the measurement of flour, baking powder and soda?

      @@sanjana277 Hi. If you're using all purpose flour, the measurement will be the same as cake flour, so as the baking powder. There is no baking soda needed.

    Instead of 7 inches baking tin can I use 6 inches?

      @@janehuithyelee1063 it may possibly overflow for 6 inch. I suggest you can do a 4 eggs ratio instead. For every ingredient, multiply by 0.8. Lets take butter for example, 250g x 0.8 = 200g. Do the same for every ingredient. Hope this helps ☺️

      @@jessicacheong4251 Hi Jessica. I'm assuming you're referring to the vanilla magic cake which I shared recently. There is quite a big difference between the 2 cakes in terms of texture. Vanilla custard will form 3 layers: the top is cakey, the middle is jiggly custard and bottom is solid. But overall the taste is very custard cake like taste, and it's quite jiggly. The cake method is with egg separation.
      This thai version of butter cake is a butter based cake, no egg separation needed. And the texture is like a typical butter cake but more refined and much lighter than regular butter cake. I hope I've explained well. Hope you'll give this Thai butter cake a try. Happy baking!
