- This Lotus Biscoff cake (also known as a cookie butter cake) is made up of super moist, lightly spiced Biscoff cake layers, creamy (not-too-sweet) Biscoff buttercream and is filled with smooth Biscoff cookie butter. It is so so good!

INGREDIENTS:
🔹Biscoff Cake
▢2⅓ cups (300 g) all purpose flour
▢¼ cup (30 g) cornstarch
▢½ tsp baking soda
▢2 tsp baking powder
▢½ tsp salt - omit if using salted butter
▢1 tsp ground cinnamon
▢½ cup (113 g) unsalted butter - room temperature
▢½ cup (105 g) unflavored vegetable oil - I use canola oil
▢1¼ cups (250 g) soft light brown sugar - firmly packed (see note 1 on blog)
▢3 large eggs - room temperature
▢½ cup (130 g) Biscoff spread (smooth - also called cookie butter)
▢2 tsps vanilla extract/essence
▢1¼ cups (280 g) buttermilk - room temperature
▢15 individual Biscoff cookies - plain cookies (not the ones with cream)
🔹Biscoff Buttercream
▢15 individual Biscoff cookies - plain cookies (not the ones with cream). Blended to fine crumbs.
▢1½ cups (340 g) unsalted butter - room temperature
▢2¾ cups (350 g) powdered sugar - also known as icing/confectioners sugar
▢1½ tsps vanilla extract/essence
▢¼ tsp salt - omit if using salted butter (though I do not recommend using salted butter especially for frosting)
▢1½ tbsp milk or heavy cream
▢¼ cup (70 g) Biscoff spread (smooth)
🔹Extra
▢⅔ cup Biscoff spread (smooth) - 1/3 for filling in between the cake layers and 1/3 for the top of the cake. Heat slightly to make the Biscoff spread more spreadable.
▢Extra Biscoff cookies - for decorating (I use about 8 cookies, but you can use more or less).

I love that you use oil and butter for just about all of your recipes (oil + butter = WIN!). The oil keeps the cakes super moist, and you can even put them in the fridge and they stay moist.
I made this cake today and it turned out perfectly. I am a lover of anything made with Biscoff so I just had to make this and having followed your Carrot Cake recipe I just knew this was going to be great too, and I'm so glad I took the time to make it. Dear mk plz share a perfect coffee crumble ( having walnut cinnamon butter brown sugar and flour combination in between tha layer and at the top ) cake recipe. As i have tried many but not satisfied with the results. Lower layer in the centre always remain under done. So plz share your version.
Lastly i would like to thank you for your wonderful red velvet cake recipe. It was soft and delicious.
Ever since I tried someone else's Biscoff cupcakes I've been trying to replicate it into a cake. Haven't been successful yet 😕 Yours is close but not quite it. The base of the cupcakes are Biscoff cookies with some butter (think like the bottom of a cheesecake) then the batter which has a couple of ingredients you didn't use then comes the filling which is Biscoff with heavy cream mixed together then the SMBC piped high then a drizzle of Biscoff and chocolate over the frosting and finally half a Biscoff cookie pushed into the frosting. Those cupcakes are addictive, lol. If I were to make yours I'd use SMBC because it's less sweet. I'd also use the Biscoff and whipping cream filling. It's SO delicious 😋 You'd think the chocolate would make it too sweet but since it's just a drizzle it's not and it balances out the Biscoff flavor. I just bought 2 HUGE jars of Biscoff. I didn't even know they came in that size, lol. For 2 i paid about 3 dollars more than for 1 sm jar. SCORE 😄 Thanks for sharing. I'm excited about this one as you can tell...

I made sure to research myself before using the product and as far as I am aware the Lotus Biscoff products are a family owned business in Belgium and aren't on any of the Boycott lists I've come across myself. I also asked a close friend of mine who is very active in checking for Boycotted products and they were also not able to find it on the apps they use to check for boycotted products. So I was personally comfortable using the product :)

I normally line the sides of cake pan with butter paper does lining sides of cake pan affect the rising of sponge cake.
I have heard that in this way the cake vl sunk frm the centre.

I normally just line the bottom of my cake pan but it is non stick and has a loose bottom

So it really depends on the type of sponge. For a very light sponge (like Angel food cake or my light & airy sponge cake recipe) it is better to leave the sides of the pan ungreased/unlined so the cake can stick to the sides as it rises - this gives you a nice, tall sponge (which then needs to be cooled upside down otherwise it will sink). If you have a slightly more dense/firm sponge, then usually lining the sides of the pan shouldn't be an issue :)

It's like very slightly cinnamon
The texture is like hazelnut spread maybe thicker but the taste is very different

I have an honest question and wonder if it will be answered honestly or at all...
I notice a lot of times your cake looks normal to sometimes dry when showing it come from oven and decorating it but then always looks way more moist when u show the single slice up close at the end when you take the fork to it so my question is ...do u throw some simple syrup or some other moistening agent on the slice for the close up moist looking shots?
Been wondering this for a while now and this cake really forced me to ask since it looked dry until the the end. I know a lot of bakers use simple syrup and apparently is a common thing.
Hi there! :) To provide some clarification, I absolutely do not put any simple syrup or additional moistening agent for the slice where I use a fork. It's likely that the cakes look drier when taking out of the oven/decorating because it has a crust, and even when the crust is removed, you still cannot see a cross section/crumb of the cake until you actually slice the cake. I also have much better lighting when taking my slice shots so this could also contribute to it looking more 'moist' as you can see the crumb much better. If you still have some doubts, check out the comments on some of my popular videos (or on my blog) and the comments/ratings from others who have tried my cakes will speak for itself :)
