      Take a small quantity of sugar or raw sugar while using a lot of fruits as the fruits contain natural sweetness. So no need to add sugar if you're using total fruit or grapes or any fruit pulp

    I have been making wines since 2 years now. I normally dont add any chemicals like Campden or Potassium whatever it is. Wine come out good. Last batch I didn't even add Yeast as a friend suggested that the yeast from grap skin will start fermentation. It worked. Just wanted to confirm what is the ideal time for primary fermentation and how does temperature alter that function. Thanks for the video though.

      To protect the wine from fungal infection we use Campden or sulphite or you can use pasteurization in which we heat the wine to 80 degree to kill the bacteria.
      Using wild yeast present on the skin of the fruit is a major cause of fungal infection. Ur Lucky us Wine Didn't get a Fungal Infection.
      Use good quality of yeast if possible, wild yeast is risky.
      U can re-use good quality of yeast again and again not to buy it for every time. I will show u that in upcoming video.
      7 to 10 days is the ideal time for primary fermentation. If the temperature is high then even 5 days are sufficient. And if the temperature is too low, it may take a long time, and the same is for secondary fermentation. Fermentation in wine stops at very low temperature.

      Pectin is the figurative opposite of pectic enzyme. Pectin is a clouding agent. Pectic enzyme breaks pectin down so fruited beers can be much brighter. I use pectic enzyme

      सबसे पहले मधुमहे से ग्रस्त पेशेंट को दूध से बनी सभी चीजों,दही, लहस्सी या छाज, पनीर, अंडा, मांस, मच्छी का त्याग करना होगा।
      शुगर कंट्रोल में आने लगेगी। सुभा शाम शुगर की गोली खाने से शुगर पूरी जिदंगी खतम नहीं होगी, केवल चेक करने पर नजर नहीं आयेगी लेकिन गोली न खाने पर फिर से दिक्कत, आयुर्वेद में ही इस का जड़ से ईलाज हैं।
      वाइन से दिक्कत नहीं हैं दिक्कत दूध से बनी चीजों से अंडा, मांस, मच्छी से हैं। ज्यादा दिक्कत हैं तो आयुर्वेद दवा 4 महीने तक खानी पड़ेगी और कुछ प्रहेज़ भी करने पड़ेंगे।

I saw so many videos on CZcams but I got detailed information from you in easy way. So you are my pioneers. I'm here in kathmandu and unfortunately wine yeast, Sodium metabisulfite, peptic enzyme, Bentonite so and so forth are not available here. I decided to use bakery yeast, papayas skin, hot water. Am I going right way?
    My two ltr tangerine wine is not going to be clear although it was two months of second formentation. Can I still add papaya skin on it?

      Bro you can skip the chemicals and also the yeast. I found it fermenting without yeast as yeast are present on grape skin. Still adding papaya skin is a good idea

    With you video I tried my hand at making grape wine. The fermentation went very well but from day 2 of fermentation it smelled like vinegar. Now after 9 days while putting it in secondary fermentation I sipped a spoon and it tasted little sour. So is it infected and wasted?? It still smells little like vinegar.

      Agar aapne abhi abhi wine banana shru keya to aap 40% juice ya fresh pake hui fruits use kejeye baaki 60% sugar and water.
      Jub aap ki 3-4 wine sahi ban jaye or aap ko lage ub dikkat nahi hai or aap wine banane k baare mai samjne lago ho to aap paani kum use kejeye ga or sugar bhi kum use hogi. Almost 100% pake huwe fresh fruits ya fir juice bhi le sakte ho haan thodi sugar add krni hoge.

    मैने आपके व्दारा बताये तरीके से २किलो black grapes की रेड वाइन(३ लिटर पानी कुल ५ लिटर ) आज से ११ दिन पहले तयार करने को रखी है. Fermentation वगैरे सब ठीक चल रहा है. परंतु मुझे लगता है की उसमे शुगर थोडी कम होगयी है. तो क्या अब थोडी शुगर पानी मे घोलकर डाल सकते हैं क्या. कृपया मार्गदर्शन करे.

      शुगर डालने की जरूरत नहीं है आपने जो शुगर डाली थी उस शुगर को यीस्ट ने खा कर अल्कोहल में परिवर्तित कर दिया है।

    Hello sir, I'm currently in the process of making 18 liters of wine with 12 kg of ripe black grapes, using your recipe. Unfortunately, I mistakenly used sodium benzoate instead of sodium metabisulfite. After washing the grapes, I rinsed them with water containing one teaspoon of benzoate, and I also added a pinch of benzoate to the fermenting jar. I later discovered that sodium benzoate halts fermentation and kills yeast. With 12 hours left before I plan to add yeast, I'm concerned about achieving proper fermentation. If not, what steps should I take? I hope to receive a reply in time. Thank you.

      Potassium metabisulfite and sodium metabisulfite is almost equal.
      The quantity of metabisulfite is almost correct.
      Just add yeast after 24 hours

    I am a little confused Bhai. At the beginning of your video you mentioned 100 gms sugar per litre but later on in the video you have shown adding 200 grams sugar per litre. Please clarify. Thanks.

      100 grams of sugar is for per litre of juice and pulp mixture.
      200 grams of sugar is for per letter of water.
      For example u have 2 litre of juice and pulp mixture and u have 3 litre water then u have to add 200 grams of sugar for pulp and juice mixture and 600 grams of sugar for water, so total amount of sugar is 800 grams.

      Potassium metabisulphite paani mein add kr k uss pani se apne wine containers ko dho sakte ho ketanu rahet ho jayega container or oxygen ko bhi bhi wine se nikaal deta hein.
      Pectic enzyme se wine jaldi clean ho jati hein

      जी हां कर सकता हूं लेकिन मार्केट जैसे बीयर में झाग चाहिए तो कैग और carbon dioxide सिलेंडर चाहिए होगा। उस के बिना मजा नही हैं बीयर बनाने का।

    Am doing for first time, how to be sure it it drinkable after 21 days. I mean no poisonous thing in that as we read in news paper sometimes. Pls answer if there is any way to test the quality. Next time i want to do 4-5 liter. Thanks millions

      Look dear it is not necessary that your wine is made on the 21st day., it depends on the fermentation process and then after it is properly cleaned... sometimes it takes too long to clean.
      Beer and wine are both fermented beverages that make ethanol it 100% safe to drink.
      When we make distilled drinks like whiskey, vodka, rum, gin, methanol is introduced, which is fatal, causing blindness and sometimes death when methanol is not properly separated from the distilled drink.

      @@ShokeenRavinder thanks a lot, this time i missed to add Potassium Metabisulfite but used 1L boiled cool water and added 500 gram sugar in 1kg black grapes.

      @@134Ankit In rainy days boile fruits along with water, sugar and spices if ur using spices, keep it for fermentation after cooling down . This is for prevention from fungal infaction in wine.

    It makes a sugar syrups with alcohol not wine. Wine needs full of flavours ,no need to add water and sugar of your hydrometer read. SG 1.07 to1.04 ,to balance acidity you can dilute with water or add acid blends into it. Better do a pH test

      Its all about ur taste you can make wine from flowers, fruits, vegitables even rice or wheat.
      Black grape wine is very close to the red wine which is available on the wineshops.

    Sir, I started preparing black grape wine on 22 Jan 24 and filtered it after 14 days and left it for secondary fermentation with the ballons (without punctureing)on the plastic bottles . It has been more than a month but it has not become tranperant yet as you mentioned. Pls guide what to do next.

      Have you added pectic enzyme into it?
      Now there is nothing much to do with it. Just bottle the wine and keep all the bottles in the refrigerator for a week or more.
      After wine gets clean and whenever you want to enjoy it then again you have to take out wine to another bottle as you will find sediments in the bottom of the bottle.

      Licence k bina aap ek bottle wine ya beer market mein nahin sale kar sakte wo offence hoga jiski vajha se problem mein aajaoge.
      Aap apne personal use k leye bana sakte ho uss ki bhi limit hein 19 ltr .... 50 ltr kisi k pass milti hein to mana jayega ki commercial purpose k leye bana rahe ho.

      खट्टे पन का अब कुछ नहीं क्या जा सकता बस अब आप जो भी वाइन भविष्य में बनाए तो ध्यान रखे आप की वाइन ऑक्सिजन के संपर्क में ना आए। जुगाड से बनाए गए एयर लॉक में यह दिक्कतें आती है।
      सफ़ेद परत के लिए 2-3 चुटकी सोडियम या पोटैशियम मेटाबाईसल्फाइट का डाल कर मिला दीजिए।
