      I am making the apricot bars. I made my own quinoa flour, simply using quinoa, and I used rolled oats, but I blended them up a little to make them more instant, and since i am not vegan I used an egg rather then a flax seed one. I think I needed to add larger quantities of ingredients since it did not cover the whole pan... they are baking now!

      I tried the apricot bars, and it was good, but I think 1/2 cup of the dough for the toppings is too much? My crust was too thin and the top was fully covered with toppings. Maybe 1/4 cup is enough?

    The peanut butter choco bars are super delicious. I was low on coconut sugar, so I swapped it for pure maple syrup. I also baked mine in a rectangle-shape silicone 12 muffin mold. The baking time was extended by seven minutes but they came out perfectly.

      I have successfully used oat, millet, sorghum and amaranth flour in recipes like this. When the recipe requires rising (muffins, etc.) it can be a bit trickier as quinoa is a high-protein flour and the subs have to be spot-on for your final product to turn out. Just my personal experience... I've been cooking/baking gluten free for about 10 years now so I've made a TON of mistakes ;)

      Oat flour is what I use. No oat flour? Take your oatmeal and grind it up in any kind of grade or you have even just a little bullet grinder. (Little cheap one). Just takes more time to grind small portions.

      Well, you could chop the ingredients with a knife. It might take a while.. I think chopping just a little bit would also be okay, but then it could happen that your bars aren't really stable and might break while baking a bit. I personally don't mind when I end up with

    Had to stop on the first one as I'm unconvinced about the claim its "really low" in sugar. Jam is a min of 1:1 fruit to sugar ratio and more often a 1:1.5 (plus natural sugar in fruit) plus, the maple syrup - doesn't seem really low to me. Sounds moderate in comparisons to a traditional bar of its type for sure - but not "reallly low".

      E Bap A flax egg is made from flaxseed which you will be able to buy in health stores and supermarkets. You just put the flaxseed in a food processor and once you have removed it from the food processor put in the bowl and add water to form the flax egg.

    These all look very tasty, but after checking out the linked recipes and the nutrition facts, they don't seem particularly healthy. I wish they had a bit less fat and more fiber and protein to help keep me feeling full longer. Not sure how this would affect consistency, but incorporating something like Chia seeds as a fat source could provide healthy fats and loads of fiber! cocoa powder is another good source of fiber and it can add a ton of flavor to treats. I have no clue how (or if) it would work, but it'd be cool to incorporate Greek yogurt to boost protein content. Maybe it could be subbed for some of the nut butters or other wet/binding ingredients? not sure if they'd need to be refrigerated because of it tho. Including something like blackberries or raspberries would be another nice way to introduce a little sweetness and a ton of fiber, but this may also reduce shelf life or require they stay refrigerated.

      @@kjoto2 You are absolutely correct, nut butters have a higher protein density per gram, but that comes at the cost of much higher fat density per gram as well. A 32g serving of organic peanut butter, for example, is 200 calories, 8g protein, and 15g fat. A fattier, commonly available greek yogurt, on the other hand, is a 227g serving of "Fage" brand 5% plain greek yogurt and it contains 210 calories, 20g protein, and 11g fat. I'm not saying the recipes should contain no nut butter, but I believe subbing some greek yogurt would provide a better overall macro balance.

      @@janetgordon2484 There's a ton of research that points towards high quality protein and fiber being useful in keeping you satiated. I'm not super familiar with Ketogenic diets in general, but I haven't seen much that recommends consuming more than 35% of calories from fat. Can you point me to some research on this topic?
      I've personally had excellent results with 30% protein, 30% fat, and 40% carbs (all by calorie, usually maintaining +/-5% of those numbers). I've found this to be sustainable for me long term (3+ years) and, along with exercise, it's helped me lose quite a bit of weight. This is all anecdotal, though. I'm sure other folks could have a different response to the same diet.
      All of these recipes seemed to have low protein content (6-11% by calorie) and low fiber. While I get they are a snack and not meant to be the only source of food for the whole day, I personally like to push even my snacks closer to my macro ratios, as I find it just makes it easier to balance my diet. I like the recipes, I just wanted to suggest some ways to increase protein and fiber content while keeping the spirit of the snack intact. The video has "healthy" baked (hehe) into the title....while the individual ingredients of the recipes certainly are healthy, I would argue (at least for my personal dietary goals) the recipes do not result in a super healthy snack.

      Exactly and not all sugar is vegan either. Also many people think vegan means healthy but most times vegan foods are far FROM healthy. A lot of foods vegans eat are processed foods and or sugar laden foods

      Most of y’all in the replies don’t get it. Sugar is still sugar and while it may be true that most natural sugar is better for your body, that doesn’t make it healthy. Claims like these can cause complications for the diabetic.

    These look amazing but I would not call them healthy, the first one has coconout oil (which is not as healthy as they seem to make it look and in fact has more saturated fat than butter), then you use sugar and lots of nuts, these are _treats_ and not healthy snacks, if you want a healthy snack go eat an apple or some other fruit.       Yes and No. Yes these are NOT healthy and are treats and NOT healthy. Coconut Oil IS healthy though. There is so much debate but look to who is saying Coconut Oil is bad. Same goes with eggs. Many will tell you that eggs are bad and many will tell you that they are good--including the yolks. Eggs are also GOOD and safe to eat up to 8 eggs a day and eggs actually HELP stabilise cholesterol
