- How to make the most delicious crispy and juicy shredded chicken birria tacos. These are really simple to put together and I've adapted the recipe to make it cheaper than regular recipes, due to the increased price of things these days.

Ingredients -
Pico De Gallo -
5 - Tomatoes, Diced, Pulp & Seeds Removed & Reserved
1 - White Onion, Diced
10g (0.35oz) - Coriander (Cilantro), Roughly Chopped
1 - Jalapeno, Diced
Juice of 2 Limes
Seasoning To Taste
Toasted Spice Mix -
1 1/2 tsp (5g) - Black Peppercorns
1 1/2 tsp (4g) - Cumin Seeds
1 1/2 tsp (3g) - Coriander Seed
6 - Whole Cloves
1/2 - Cinnamon Stick, Snapped
Chicken & Sauce -
2 Tbsp (40ml) - Olive Oil , Divided
1.2kg (2.65lbs) - Chicken Thigh, Bone-In
2 - Brown (Yellow) Onions, Chopped
6 - Garlic Cloves, Chopped
220g (7.76) - Chipotle In Adobe
1 1/2 Tbsp (30ml) - Apple Cider Vinegar
5 - Tomatoes, Chopped
Pulp & Seeds From Pico De Gallo Tomatoes (Optional)
1 Tbsp (2.5g) - Dried Oregano
1 tsp (1g) - Dried Thyme
1 tsp (2.5g) - Smoked Paprika
5 - Dried Bay Leaves
650ml (2 & 2/3 Cups) - Chicken or Vegetable Stock
Seasoning To Taste
Tacos & Toppings -
12 - Corn Tortillas
350g (12.35oz) - Mozzarella or Monterey Jack Cheese, Freshly Grated
Coriander (Cilantro)
Lime
Recipe Notes -
Pre Ground Spice Mix -
1 tsp (2g) - Ground Black Pepper
1 tsp (2.5g) - Ground Cumin
1 tsp (2g) - Ground Coriander
1/4 tsp (0.5g) - Ground Cloves
1/4 tsp (0.5g) - Ground Cinnamon
Blending Notes -
I used an immersion blender which means that it can be blended in the pot we cook it in without the need to remove it and place it into a blender. If you only have a blender, you will need to allow the sauce to cool down before using it to prevent the risk of heat explosion that can cause serious damage to yourself, others, and equipment.
If you don't have a blender or immersion blender, place a sieve over a bowl and press the sauce through the sieve until smooth. Don't discard the solids though as this is the seasoning. The only thing I'd suggest removing if doing it this way is the bay leaf. Other than that, keep everything.

Love this made with oxtails. I'd recommend anyone try this with substituting anything that needs to be with what's available (living where I do in the US everything I need is available at any local grocery, fortunately). I think the key takeaway from birria is that tortillas are even better when fried with a good sauce.

How exciting to see you tackling this recipe! This has become mine and my husband’s favorite taco variety at our local Mexican restaurant. Yes, it’s beef they serve-no goat, thankfully. lol I hadn’t thought about making it with chicken. I think you did a good job working around not using the dried chilies. I live in one of the Southwestern states, so those chilies are very accessible, but I imagine there’s lots of places where you wouldn’t be able to find them in stores. OMG! I was waiting for you to say something about the taste at the very end... I guess it makes one speechless of deliciousness. This recipe for me means a lot of playing to do... yes playing with all the prep it seems fun... I do find touching any kind of raw meat with my bare hands gross (literally fearing it might get up again so insane I know😅) so I was a joke for years throughout my teenage years and early twenties until I started wearing gloves while handling it, but you should see my face the total so displeased look which also is a joke for everyone, but at least I can cook everything now😁
Honestly I had filmed me talking after taking a bite but when editing I’d realised the mic had ran out of battery and the audio was awful. I’ll bring it back in the next one 🙏

I highly recommend Chili Mojo in Magill Rd, St. Morris. They have an amazing range of dried and jarred chilli 🌶🤩😍 (and no I don't know them personally or anything. I just buy my supplies there and they post them out to me.) 🌶💛

Looks really good; I'll give it a go -- except... I don't know what brand of chipotle in adobo sauce you're using but over here (U.S.) if you use that much of any of the most common brands for the amount of sauce you made, it will light you up!! Maybe you abruptly ended the video that way so you could run for a glass of milk to put the fire in your mouth out? :)
I'm not a spicy-hot lightweight but I would use at the most 1 or 2 chipotles and a tablespoon or two of the adobo sauce they're in and that would still make it too hot for most.
The chipotle in adobo I used isn’t that spicy at all. We pretty much have 1 brand in Australia that’s in most supermarkets which is called la costena
That is actually Tinga, because it has chipotles and tomatoes.
