Is This the Worst Historic Recipe? Raspberry Dumplings From 1828

  • Today we have fruit dumplings made using delicious ingredients. But could the cook time make or break this 200 year old recipe? Be sure to watch till the end to see images of the real recipes (or receipts as they used to be called) as they appeared in Modern Domestic Cookery (1828). Just like today, not all recipes are a keeper :( .

    200 years later and this recipe is still nearly identical to modern day Czech style boiled fruit dumplings. Though the crust may be different, the filling and boiling method are the same as is serving them with butter & sugar! However, unlike these modern day dumplings which are only usually boiled for no more than 10-20 minutes, this antique recipe calls for them to be boiled for a full hour. Maybe the author was still trying to figure this one out? What do you think? I've translated the original recipe into modern instructions below 😺🐈‍⬛.
    Raspberry Dumplings, 1828
    2.3 cups of flour + a couple extra tablespoons for sprinkling
    1.5 sticks of butter + 1 tablespoon melted for drizzling once done
    Cold water
    Raspberry jam
    2 tablespoons of sugar
    Water, for boiling
    Prepare the paste by combining your flour and 1 stick of butter with a pastry cutter or fork until the butter is no bigger than rice among the flour. Add in enough cold water to make it into a dough. Add your water a little at a time. If you have accidentally added too much water add a dash more flour until you get a proper dough that isn't too sticky nor too dry. Roll the dough out as thin as a coin then dot it with small bits of butter, dust with flour, fold over, and roll out again. Do this a total of 3x. You will use up half a stick of butter when doing this. Roll out again thin, as you would when preparing pie crust. Cut into either squares or circles using a cookie or biscuit cutter. Put a small dab of raspberry jam in the center of each, fold up, pinch and roll in your hands till you have formed a ball. Repeat for all of them till you've used up all of your dough. Simmer for 1 hour (or...20 minutes if you too disagree with the original recipe. If you try this please let me know how it turned out!). Drizzle melted butter onto a plate. Lay down your cooked dumplings and sprinkle sugar on top.

      I was just about to comment that the whole process including the final result are identical to fruit dumplings in Czech, where I'm from. However, we typically use fresh fruits!

    I never comment. But I really appreciate how transparent you were on this recipe, how not all of your cooking videos shows amazing and the best turned out food fare (you showed we have evolved some in 2 hundred years of food sciences). My British partner is older, loves old recipe cooking, but it is reality it doesn't always turn out! Very much appreciated you today being authentic and we can totally relate, and smiled with that part :)

    My first instinct was to bake or fry them. Boiling would never have crossed my mind, but if I do make it, I will not boil them more than 20 minutes. Good Job Lady!!

    We make an old old recipe here in my part of Canada called Blueberry Grunt. Its made with baking powder dumplings baked with fresh blueberries, sugar and cinnamon . Served hot with vanilla icecream. It got its name because its so good you grunt when you eat it!

    This one made me giggle quite a bit. I love that even when the recipe isn't what you would have liked you don't throw it to the wayside. It adds a bit of whimsy and fun to the channel and shows your genuine love for just the experience rather than purely aesthetic content, so rare these days!

      It is a fun experiment! You throw a bunch of ingredients into a bowl and pooof you get some magic. I try to make them 100% even if I don't think that I'll care for it but that's how you get the dish as it would have been all those years ago.

    My grandma made fruit pierogis along with savory. Hers were only boiled a few minutes till they floated then fried.
    I like how you keep to the recipe even if you suspect it might not turn out great.

      That's exactly what I was thinking, also. Not only the flour, but all the ingredients were a tad different back in the day. But yeah, especially the flour makes the difference and that is the most plausible explanation for the increased boiling time. As you, Justine, noticed, some recipes that you tried called for a different amount of modern flour to use than the olden type of flour. And because of that, it might be possible that the olden flour needs more time to boil or cook, in general.

      To my knowledge, white flour wasn't common until the 1880's when the roller mill was invented,otherwise you had to sift the bran out yourself to get it, mostly royalty food at that point.

    I love the sheer variety of dishes you can prepare so well with just a few basic appliances and tools. Truly shows that a lot of the time, you don’t need these modern fancy gadgets to make delicious food!!

    Love it! A little cat hair on that dough never hurt anyone. Don't get me wrong as I grew up on a Norman Rockwell farm and the sanitary conditions when cooking wasn't to today's standards, but the food was organic, and we were healthy.

      I always wash my hands before I start to handle food too and I definitely would not have pet the cat till after I was finished touching food. After that the cat would get lots of attention.

    I really like the fact that even though you went by the recipe, and it didn't come out the way you thought it would, you still went through it and finished it. you didn't cut anything out, and gave your own opinion on it.     I think baking or even frying in a skittle might work better than boiling but I agree boiling for 20 minutes or so might work better. 🥰💕❤️👍👍

    yeah, we excatly do that here in Czech Republic, but the dumplings are filled with a half of a plum or a strawberries. Also blueberries or apricots are great option. And when you should serve these with melted butter, grated hard cottage cheese and sprinkled with sugar.

    Ah yes! It appears you have one of those mysterious roof cats. They like to sit in high places and you never see how they get up there. When removed from their perch, they almost instantly return....screaming for aid. Truly a very intriguing and infuriating creature.
    I've experiences quite a few of them.

    Here in North Carolina, raspberries aren't as plentiful as blueberries, or blackberries, so I use those to make fruit dumplings. When my husband and I did reenacting, I would feed our unit recipes like this.

      Oh yes for sure! I've been filming every bit. The next video that'll come out is framing and I'm waiting for the framing to be done to put that video out. Framing is harder than expected. That's the whole core of the house including the roof. We hope to have the roof up within 1 month's time or less! This Saturday we are having the 2nd floor wall raising party.     Boiling them for an hour did seem too long. I bet you could use strawberry jam just as well. Maybe baked or fried would be a better choice. Love your honest comment about the recipe. ❤

    I LOVE Mish Mish's MEOW whie starting the puff pastry! Make a batch and boil for an hour, perhaps there is a reason for an hour boil? Won't know until you do the recipe as written.

    First time viewer here. Iove the historic feature/ setting, however I think that the dumplings would be better browned. Thank you for this bit of nostalgic pleasantry.

    I loved watching your video. =) The kitty is so pretty! I love how you followed the recipe, even when it seemed wrong. 😅
    One thing that confused me about the dumplings is that, when I make dumplings (in soup), the recipe usually says to cover the pot and simmer. This recipe was uncovered and boiling? Just wondering if that would have made a difference. 🤷‍♀

    I don't really know anything about dumplings (hated them since childhood), and I was way on board with buttery puff pastry and raspberry jam. At 4:47 I started singing the "Please Don't Boil Them" song and was immediately crying. 😂
    Needless to say, I've learned THE main thing about dumplings...always made with wet, wet heat...which is the reason I've never liked them. 😆
    Edit: Google informed me dumplings can be made by frying in a pan. Dumplings are not completely dead to me! \o/ (No idea how historical pan fried dumplings are tho).

    The little Cat MIsh Mish looks so much like the little stray the Tenants & I cared for on the Rental Property I managed... Her name was Flea-Bag... I bet those Dumplings would have been amazing Fried, and sprinkled with some cinnamon sugar, or dipped in Honey-Butter. ...

    I wonder if they would be better baked? Seems odd to boil puff pastry. But then again, alot of things were odd back then 😅 Once again Mish Mish stole the show 🤘🤩🤘

    Hello, thank you for the video! I'm surprised these were boiled, I would have thought frying them would have been better. But they were called dumplings so I guess I shouldn't have been too surprised. I'm sorry that they didn't turn out right.

    Seeing you try to get Mish Mish off the roof made me laugh. lol I'm not a chef by any means but I think an hour would be way too long to boil them. Oh well, you win some you lose some I guess. Keep up the awesome content and stay awesome.
