I use air fryer, just toss together in one bowl: olive oil, Italian bread crumbs, garlic salt, pepper with two sliced zucchini. It's quicker than using oven and flavor (almost) as good.

I'm definitely looking for zucchini at the farmer's market tomorrow. These look too yummy to not try. (I've tried Primal Kitchen's avocado oil mayo and it has a very funky, unpleasant taste to me...don't know why.)
Love your channel and whilst I agree with the spirit of your recipe, just be careful of the breadcrumbs. Today's commercial breadcrumbs are now containing maltodextrin. My grandmother noticed a difference in the taste, and we checked the ingredients. Sure enough, guess what was in the list. So, just be careful, folks.

I’m not an egg eater…anyone know a vegan version? Looks delicious and I’d love to make😊.
Add 1 T ground flaxseed to 3 T water, let sit for 5 minutes to replace 1 egg.
You could also try an liquid egg substitute 🙂
You should use the trimmed ends of the zucchini to spread the oil on the pan, not paper.
