It is the fruit of two years of engineering and prototyping : The exterior is made out of copper but the interior is lined either with stainless steel for ultimate ease of care, or with pure silver for unparalleled performances. As I mentioned in the video, we only made 750 units because it was a first timer for me to produce/ import/ export.
I know that not everyone will be able to afford a pan like this, and I both understand and respect that. The only thing I can say is that the price point is absolutely fair considering the quality and care that went into making it.

really like the pan, but I wish the handle were slightly lower. I'm short and I don't think the angled handle would work as well (I already have my arms at a 90 degree angle when cooking and I worry I'd have to reach up a little with those pans). Personally, I also prefer handles that aren't angled up for aesthetic reasons
this might just be how I think about this and right now I'm a broke student so it wouldn't be in my budget, but just wanted to let you know for future plans
Maybe I'm clueless, but wouldn't silver affect the flavor of a sauce; Especially if there is any acidity? The pans look incredible by the way! And the price point is definitely fair, a little low even. Frankly, I was surprised the originals were under $600.
I usually don't have a problem with sponsored videos but introducing your own product and throwing a sponsorship on top is as cheap as I've ever seen on YT.

There is no way the love that Alex has for cooking that we have witnessed over the years, his travels, his growing skills and passion put into a collaboration with a craftsman that inspired a journey in the legendary Sauces Series isn't going to be a HIT!
What an awesome product! But it is a real shame that there isn't a induction capable version. I have an induction stove myself, and here in Sweden at least, very few have gas and most new kitchens today have induction due to their better efficiencies.
Just get a steel plate to put under the pan. They are relatively cheap and people often do it with clay pots in Japan so I see no reason it wouldn’t work with copper.

@@Shalmanese No.... but it defeats the purpose of having induction with fine temperature control. Now you'll have to wait for a slab of metal to change temperature.
@@Shalmanese nope it doesn't the point of copper is to distribute the heat evenly which it will still do.
@@goffe2282This is the same as using a copper core stainless steel pan. you get the same temperature control and reactiveness to changing the power. What you lose is a efficiency since their is no bond like with a copper core pan so there will be a fair amount of air between the two pieces of metal. It will be better than a resistive element but worst than IH on a pan with a core.
@Alex, this is a great idea. I don't see myself buying one but I applaud your branching out into a new business. And starting with a limited run (750 units) with two variations at different price points is a smart way to go. Be sure to monitor your website traffic to see where people click first, return to also gauge interest in which pan you promote to the second production run. Oh, also, the way you introduced this is brilliant. You didn't just start with 'here's my pan to buy', no you told a story about how it came to be and the behind-the-scenes thinking. People love a good story. Good luck and hopefully you'll give us an update on your business adventure.
Looks like the copper silver version was selling 1.5 times better than the copper stainless. Tracking the volume of the pans over time until selling out.
Also looks like Alex has around a 1-2% conversion rate based on views before selling out. Impressive for an expensive product!

I would love a silver one wich works with induction. If you are searching for a good pan I recommend the brand Fissler, have some pans from them and they are great to work with!
I have a copper/silver that works on induction made by Navarini, honestly the combination of the magnetic disc and the other materials simply doesn't perform that well on induction. Tested out different pans and in the end I would personally say that copper/silver is the best for gas stoves, while for induction a multiply pan like a Demeyere can't be beat.
Fiskars has some really good induction coockware!

The pans look great! I still can't afford it, but I'm glad the price was cut nearly in half to make it more affordable for those that may not have had 600 bucks, but do have 200-300.

This is great! Although I won’t be buying due to lack of induction compatibility. Induction is basically a must have for any kitchen cookware these days for a range of reasons. I’d love to see a version made that does work with induction. Hope it goes well enough for you that you can consider making that change.
Well… to each its own. I had gas installed in my new house (heating is via a heat pump), only for cooking with copper. Once you've tried copper, it's hard to let go of.
However you may want to look into Falk Coppercore which is apparently the closest thing to copper cooking compatible with induction. Falk is a great brand, I own a few of their cookware and it's really nice.
Hestan Culinary makes copper cookware that’s compatible with induction!
I’ve learned and tried so many of Alex’s recipes and techniques. He really has given me a lot. I’m happy I was able to purchase the copper/stainless saucepan. I’d have spent the money in the silver lined one but they were already sold out. This is brilliant. Thanks Alex.

We need a good copper sauce pan that is compatible with induction! It’s nearly impossible to find.
Falk cookware has compatible induction pans with inner copper lining.

@@floflogreco There is a reason the inherited copper pots have been hanging from a rack as decoration for 70 years in French bourgeois kitchens, it's a pain. the copper exterior is already a hassle, counterpart of it's benefits, it will dent easily and react with acids and air adding a thin layer of silver probably doesn't do much compared to the wildly traditional use of tin while being expensive. Frankly, unless you are a saucier at a very traditional 3 star restaurant you are way better off using quality stainless steel with inner copper core on a quality stove gas or induction for cheaper, durable, maintenance free.
Alex is more consistent with this 2 year project than half marriages in US

His pans are a complete ripoff. He took a handmade product that was basically a work of art that can last a lifetime, and worth the price, and created a generic looking product that costs about 600% more than it should.

$220/$345 for a saucepan is not affordable. I thought that when he was talking about bringing the price down and cost being a factor for home cooks, he had actually done that, but probably 99% of home cooks won't dish out that much money for a saucepan. I have a couple of 10+ year old Ikea saucepans that probably cost me around 10-15€ a piece at the time and they still do their job just fine, getting a marginal improvement over that doesn't really seem worth $220+. Great if he can get the whole batch sold but I think he should be more realistic about the affordability when giving the sales pitch.
Exactly. He took all the charm and heirloom quality of the handmade pans and turned it into what looks like a generic mass produced chinese pan, and kept the price as though it was still a handmade work of art. Average home cooks can buy an entire pan set for less than $200. Saying this was to make it affordable for the home cook is an outright lie.

the hammering is what makes the pans so beautiful, it's cool to bring them down to a price point but it completely eliminates the magic of what made them a work of art in the first place
so almost $400 for a plane looking pan versus the ~$550 for a beautiful work of art. You may have lowered the price a little, but it's still very expensive, and if you're going to spend money on a pan that should last a lifetime, maybe spend the extra $150 to get the real deal?

@@var9828 that's my point, his entire premise is to bring the price point down so average consumers can have the pans, but the price is still astronomical for a home kitchen, yet loses the majority of the charm that makes it worth it.
If people want a pan like what Alex is selling they should instead just buy a similar material pan made from some chinese company, for a fraction of the price. There's effectively no difference. If they want a real work of art to last a lifetime, then buy the hammered pans directly.

Very cool Alex! I agree 16cm is probably the most versatile and useful saucepan size, and it looks like about 1.5mm thick which is nicely responsive while still being sturdy. I'd love to see a tin-lined version if you do a second batch. With tin presumably you could bring the price down a little more, without the slower responsiveness of stainless (the tin layer is too thin to slow heat transfer), and it's also a little easier to clean than silver (and a lot easier than stainless).

Congratulations Alex, this is GREAT! Only thing I would suggest is that since stainless steel is actually one of the least thermally conductive metals known, I'd go with the ol' "stainless is more durable than..." line of thought. Now, if you had used a thick enough piece of SS to make it induction compatible that might have been interesting, but then you'd have lost the thermal conductivity edge. Otherwise, might as well go with tin - but that would be just like any other copper pan.
I bought one of your Blue Fridge notebooks last year. It'll be a minute before I can buy one of your Salut pans. But I've always wanted a set of copper cookware & I'd never heard of silver linings in cookware until you. So merci bien for making high-quality cookware much more affordable for us regular Janes & Joes. 🥰
