The problem is that Hulk is supposed to get stronger as he gets angrier without a limit and cannot be overpowered by strength of even the strongest beings in the universe because unless he gets one shot KO'd, or outsmarted he will always win which makes his fight with Thanos such a disappointment even if everyone knew he was going to loose as it was both beginning of the movie and a major plot point of the story. Of course in comics they also constantly weakened him depending on the writer starting with Stan Lee himself as he was too strong making him a boring character for him to write. The only time mcu hulk truly surpased '08 hulk was during the fight with Stark's Hulkbuster as he was blinded with anger and rage, and post endgame hulk was the weakest, sure he still had Hulk's body and was smarter, but Banner-Hulk is not angry.

Everyone keeps skipping over the fact that Thanos is a train combatant he's not stronger than the Hulk he just knows how to fight better if you watch what are you doing he hit's hulk in just about every pressure point that counts that matters the Carotid artery the artery in the chest on both sides I think he hit him in the liver and they were all with super strength and speed technically because Hulk does has a healing Factor he should have recovered but I guess it was enough to put him to sleep before he could rage and fight back and that was very confusing to Hulk he didn't want to come back out metaphorically his basketball got taken and he didn't know what to do about it

The hulk was roughly the same strength as Thanos but the hulk is a scientist for the most part whereas Thanos has warring with and wiping out half the population where he went to war then went to the next planet and began wiping out half the population again which in my opinion makes for a far superior warrior.If your always fighting you get good at it!
