I worked in chocolate factory's for over 40 years. Your chips you put on top look like they were blooming, they had gotten warm at one time or weren't tempered right when they were made. Doesn't affect the taste just look funny with the cocoa butter coming to the surface. Even after 40 plus years I still love chocolate, great job.
I knew they didn't look right and figured it was something like that. I wasn't going to use them, but my husband thought they looked good on the top and I have to agree. They lightened it up.
I love the jagged cracker crust edge towering over the dessert is so beautifully dramatic.....I can think of so many events I host that it would be welcomed.

Great recipe. In the Uk we just put a thicker crust on the bottom. We donât call it crust just base. Thanks for doing this in the foodi. Definitely one to try!

As you made this lovely cheesecake, I wondered if you could make it a black forest cheese cake with a Black Forest pie filling (with cherry brandy flavoring) then topped with the chocolate gauche? Would it work? Just a thought.

Hello me lovely ive been watching your channel from the uk, you come across very informative so thank you, ive also followed your recipe for the cheese cake, I'm not a huge fan of dark but i can deal with it, to cut through the bitterness of the drak chocolate at the very end i put small holes all over and put apple jack Daniels what a game changer of course not over done and was lovely.

My Ganache was runny and never thickened and set up. While the cheesecake tasted amazing, when I cut the first piece...the ganache ran down all over the place. I used heavy whipping cream and 1-1 to chips. Thoughts on how to get thicker ganache??
@@scottbrown2536 It sounds like you may need to whisk it more. I can't think of any other reason why it wouldn't thicken. What chocolate did you use?

You are amazing . Gosh I may make this even though I donât eat sweets but i can give some to friends. Is it easy to move the care from the current non-stick pan to another pan, example a portable cake carrier?
Once it sets, you can move it. You can also line the bottom with a parchment round and that makes it easier.

Not breaking an egg in your ingredients, makes sure a random shell piece doesnât go in.. and easier to get shell out if it does. đ
You add them 1 at a time so the egg mixes with the batter instead of with each other. I'm not sure how much of a difference it makes with cheesecake, but I've always done it this way. LOL

Iâve seen others use parchment paper on the bottom of the pan... and you didnât use any at all...you donât have any issues with sticking? (Btw, thank you for all your efforts! Love your recipes! â€ïžâ€ïžđ„°đ„°)
The only reason I didn't is because I always forget. I didn't have any issues with sticking, but it is easier to pull off the bottom pan if you have a piece of parchment. Makes it easier to cut and serve, too!

Do you change recipe in any way to account for altitude? Iâve made cheesecakes at 6K ft. And thought they were under but looked just like yours, kind of jiggly. I put it back in to cook for more time. I think it may have overcooked.
I'm not well versed in adjusting the PC time for altitude, but I do think you are supposed to. They should be jiggly when they come out though.
Why didn't you use a large bowl that just sits on the lip of the pot?? Like a double boiler. Melaney from SoCal
