    Ok for some reason this seemed very intimidating to me but the wife wanted to try it! she was my souse chef, got it in the pressure cooker! I am just now getting around to watching yt videos on how to use it and I've found yours to be the best.     hey everybody! just wanted to say that I made this cheesecake without pressure cooking it and it turned out WONDERFUL!! (I forgot to take the lid with me when I took my foodi down to cook for family. xD) Here’s what I did: covered the pan with tin foil, put about 1 cup to 1.5 cups water in the bottom of the pot and used the BAKE setting on 325 for 1 hour. then removed the tin foil and baked the cheesecake for another 5 minutes, just to slightly brown the top. then placed it in the fridge for the minimum of 4 hours. I did not use the caramel (because me and my family don’t like caramel so I don’t know if that will make a difference in the baking of it if you use it in the middle). Everything else is the same as shown in this recipe. :) Enjoy! (I love this recipe!!!!)

    That looks FANTASTIC! This video showed me two things. How to make Caramel ... I LOVE Caramel ... and how to make a brownie cheesecake bottom. I was planning on making a banana cheesecake in my Instant Pot and was going to use peanut butter chocolate chip cookies crushed up for the base. But now I'm thinking your brownie mixture might be better. Decisions ... decisions ... or maybe I'll just make two cheesecakes. ;oP

    @The Salted Pepper can I put the chocolate, caramel, and pecans on top before I put the cheesecake in the fridge for 4 hours? this way I could let it chill overnight? what would happen if I decorated before chilling for 4 hours?     As @Amanda Craft says, the answer to “I wonder if I can make X in my Ninja Foodi?” does indeed lie in the hands of The Salted Pepper. And the answer is a resounding YES! I just made it yesterday, and almost forced eating it right at the four hours of refrigeration mark but I didn’t push it and waited until tonight to try it. It was out of this world! I will admit that I didn’t do the Turtle part of it (sorry, Louise, I wanted to start with baby steps), but it turned out as well as any cheesecake I’ve had in any restaurant! I cannot be more pleased with this recipe! The basic four ingredients - cream cheese, eggs, sugar, and vanilla - worked incredibly well and yes, pressure cooked, not baked! My wife has a gluten allergy so I made a crust of crushed up rice Chex cereal, and that, too, turned out perfectly. I was very diligent about crushing the cereal finely, too. I started out using a potato masher and finished up with the bottom of a heavy beer glass (same one I use for @jelly007’s smashed potatoes), and that worked really well. Made sure it was sufficiently cooled off before pouring the cheesecake batter in there, too. And I abided by Louise’s tips about room temperature ingredients. Yes, it takes patience to allow the cream cheese to just sit out and come up to room temperature. But it was worth every minute of the wait. The eggs I also let naturally come up to room temperature even though I could have cheated it. And I was indeed careful not to over-mix the filling with the electric hand mixer. Once I got the base filling whipped up, but not too much, it was one egg at a time, only until incorporated. Now, the moment of truth was a little nerve racking, as I didn’t have really any good tool to try to get it out of my cake pan. I didn’t have a round with a latch, I had just a regular silicone baking pan. I did line it with the parchment on the bottom (I just cut my own round by turning the pan upside down, putting the parchment on top, and carefully cutting around it), so that was great for the bottom, but the question was how am I going to LIFT these pieces out, or at least the first piece, without mangling it? I went with a small plastic butter knife, which has some give to it, so it will in fact bend as you slide it under the bottom of the crust and you can get underneath it enough to put it in a position to pry it out of there carefully. Once you get the first piece out, you can use that same method but even use a spatula to get the rest of the pieces out, now that you have more room to work with. And yes I absolutely covered it with a paper towel and aluminum foil, that worked really well to prevent moisture from collecting on the top as you remove it after cooking. I will admit I was a little skeptical about pressure cooking. I have actually never made ANY pie crust before, and I’ve never made a cheesecake before, either. I just figured if I listen to The Salted Pepper, it couldn’t go wrong. And it didn’t. Outside of the mechanics, the taste was absolutely top notch. My wife loved it, she said don’t change a single thing. I put some fresh strawberries on top of mine, she used cherries. YUM! Once again, another great recipe from The Salted Pepper. Here is a photo:

    Thanks for your video. I brought my ninja only 2 days ago and it has been on non stop 😂 i have got to the refrigerator stage on this recipe. 4 hours cannot come quick enough. Can i leave it in over night should i decide to? Its 7.30pm here thats all. And if i were to do that what would i do with the caramel? Leave it covered on the side or in the fridge? Love your vids.       I'm sorry I didn't see this earlier. Yes, you can leave the cheesecake in the fridge overnight. I leave the caramel out (covered) and then warm it in the microwave for just a few seconds until it is the right consistency for pouring.

    Is Aldi going to now be a somewhat regular grocery store for you? In the Buffalo, NY area I have the luxury of choosing among a lot of different food stores and Aldi is my first choice.

    Ok, this is the last video of yours that I am watching for today, I swear! How would the brownie base turn out if I subbed something like almond flour for the all-purpose flour? Hmm. I wonder if I would have to do something like combine coconut flour and almond flour, except that coconut flour absorbs a lot of liquid. It's tough to sub out ingredients since they each have a role!

      Maybe if you used the kind that is a direct substitution. I think Bob's Red mill carries one. It is hard to substitute those things, but if you have a gluten free brownie mix that you like, make it with that.

    Parchment paper works best. Makes for a clean release. I put it on the bottom and sides of the pan.

      I agree! I actually changed the written recipe to call for parchment. I have never put it on the sides, but that is a great tip!

    I don't have a ninja pressure cooker but I do have a pressure cooker, well, actually 2, yeah, I can't imagine not having one on hand if the other fails lol, and I have used both at same time but I've never baked a Cheesecake so not sure if I should just go for it with same instructions or wait for a reply from you or someone about using the cooker I have with same instructions or just move on to another Cheesecake Recipe using the oven! Looks so delicious!

    I preparing to pressure-cook 3 heads of cauliflower in my Foodi 8 qt. and could not turn the lid closed, It turns out the bottom of the red button was hitting the cauliflower and since it turns out the red button is an interlock that locks the lid while in the up position, so I rearranged the contents so it didn't hold the button up and the Food closed just fine!

    I used this on apples but didn.t take wax off apples and it didn’t stick but it was still good on the sliced apple.

    I've got to make this turtle cheesecake! Just a question...when making the brownie crust you used melted chocolate. Was it bakers chocolate or chocolate chips? Also the chocolate that was drizzled on the top of the cheesecake, was that melted chocolate chips?

      Debbie Jones when I wrote the recipe post, I added in to put a round piece of parchment on the bottom the pan. While I was able to get the piece out fine right after making it, it was harder to do after refrigeration. thesaltedpepper.com/turtle-cheesecake-recipe/

    Do u have any no frills cheesecake (or any cake) for a newbie to try?
    I've also heard some people make cakes only using the basket lined up with some foil?...any advise with that would be great as well since i haven't committed on accessories yet 😅.

      You can make this same recipe and just skip the caramel and toppings for a plain cheesecake. I have never used the basket to make a cake, but I bet it works just fine. I wouldn't do a cheesecake unless you have a springform pan. The easiest cake I have that you could do in the basket (you would cut the recipe in half) is my apple cake: thesaltedpepper.com/ninja-foodi-apple-cake-caramel-glaze/

    Love your videos. Have a Foodi but need to be more adventurous with it. Just out of curiosity is it ok to put a hot cheesecake in the refrigerator while hot. I always thought you never put warm things in the refrigerator because of bacteria?.

      goonie4055 That’s a great question! This is the rule of thumb; bacteria multiplies at a quick rate when food doesn’t cool down or heat up in a quick enough time and is in the danger zone (40 F - 140 F) for more than 2 hours. Cheesecake is done at 150 F, so the amount of time to drop below 140 F isn’t going to be that long. I’d refrigerate within 30 minutes. Does that mean you’ll get sick if you don’t? Of course not, but the risk goes up. The reason people “say” to not put hot food in the fridge has more to do with warming up the fridge and other foods. This isn’t going to happen with a cheesecake. A big pot of soup is different and I recommend putting the pot in an ice bath and stirring to drop the temp. Or transferring into shallow containers so the fridge can cool it within 4 hours. I hope that helps and if you ever have any other questions, please just ask!

    Save time by using a can of sweeten condensed milk. Pop the top.wrap foil around the can. Put into instant pot with rack and put water to half of condensed milk. Put that bad boy on seal for 45 minutes. Do a kwik release, pick can out with mitt. Pour into glass jar.

      I have heard that being done, but I don't know how it saves time because it doesn't even take 45 minutes to make caramel from sugar. I guess it being hands off is an advantage. I also think you have to let it natural release. My husbands mom used to make that on the stove all the time. She did have a can explode once. It kind of freaks me out, so I haven't tried it. I think her can was sealed though.

      I'm sure you could make the caramel on the stove and bake the brownie and then bake the cheesecake. I haven't done that though, so I'm not sure on exact temps and times.
