  • Welcome back to my Koufuku Graffiti cook through! This is a bonus recipe from last week's episode! Ryou bought a bunch of food from the convenience store and amongst the food was a cream puff. I've been craving cream puffs ever since so we're going to make some today!
    We'll be making scratch-made cream puffs with diplomat cream and fresh strawberries.
    The Pate a Choux dough recipe is from Sally's Baking Addiction. Sally's recipes were a staple in my kitchen growing up and I still use her recipes today. The pastry cream and whipped cream recipes are recipes from culinary school!

    Ingredients:
    For the Pastry Cream:
    1/2 cup sugar
    1/4 cup cornstarch
    Pinch of Salt
    4 large egg yolks, whisked
    1 teaspoon vanilla extract
    1 cup milk
    1 cup heavy cream
    2 tablespoons unsalted butter
    For the Pate a Choux:
    8 tablespoons (1/2 cup) unsalted butter
    1/2 cup water
    1/2 cup whole milk or cream
    1/4 teaspoon salt
    2 teaspoons sugar
    1 cup all-purpose flour
    4 large eggs, whisked
    For Egg Wash:
    1 large egg
    1 tablespoon cream or water

    I ate so many of these when I was in Japan. The craving hasn't gone away, so thanks for the recipe!

      Oh my gosh, cream puffs in Japan hit different. I think to make the filling more like Japanese ones change the ratio of whipped cream to pastry cream from 1:1 to 1:2. So 1 part whipped cream to 2 parts pastry cream. I don’t think they usually fill it with diplomat cream, it’s more custardy/pastry cream based! Let me know how that goes!! Thank you for watching 💖
