Air Fried Steak Updated Instructions:
1. Use a Steak that is at the very least 1 3/4 inch thick, 2 1/2 to 3 inches thick is ideal.
2. Preheat the air fryer to the lowest heat setting, Mine went to 265 but 250 would be ideal.
3. Air fry Steak until it hits an internal temp of between 95-100 Fahrenheit turning once halfway.
4. Remove Steak and crank up the air fryer to 400 Fahrenheit as steak rests for 6-8 minutes.
5. Place Steak back into the Air Fryer and cook until the internal temperature reaches 125-130 F for medium-rare, For Medium pull it around 135 Fahrenheit. Allow steak to rest for 10 minutes before slicing.

I cook air fry steak often in my RV. Mine does sear a little better than yours did. I found pulling at 80⁰ is what it takes. Also, since there is no basting, I melt herb butter in the air fryer in the first part of the cook and rest the steak in the melted butter while waiting for the temp to rise to 400⁰. I also salt a touch after slicing.

Looks delicious. If you want a sear in an air fryer with a perfect rare to medium rare inside, cook it from frozen at 400°F for around 12 minutes on one side for one inch thick, turn and cook an additional 7-10. It seems to vary depending on how much fat the steak has when I cook them this way. I know it sounds crazy to cook from frozen, but since my diet is mostly beef with salt, pepper, and butter these days, having it tasty is pretty important to me. I do salt my steaks before I freeze them and salt and pepper them again just before I cook them. I use a lot more salt on my food than I did my pre-carnivore days, so I don't know if it'd be too salty for most people. In comparison, my favorite "not a special date" steakhouse is Saltgrass. I think the frozen air fryer steak is surprisingly just as tasty. Not something I say lightly, being from Texas. No one believes me until they try it. Then they still don't believe me until they see it done themselves.
Also, I cook them in a parchment liner because the air still seems to circulate well, but it lets me capture the drippings. I place a few slabs of unsalted butter atop the steak as it rests and a few in the drippings to create a delicious sauce of sorts. If feeling really fancy, I'll add some collagen or gelatin powder that's been dissolved into a little water and heated along with a bit of freeze dried garlic, onion, and rosemary to the drippings. I'd use fresh, but I mostly just do salt and pepper, so it's easier for me to keep the freeze dried on hand and I only use one tiny piece of the garlic and three of the red onion. Pour it over the buttery steak atop a plate that will hold it for slopping with the bites of steak and it's like fine dining flavor every meal. I should note I use Redmond's kosher and fine unrefined Real Salt. The flavor profile of it has ruined it for my other salts.

I'd say if you plan on cooking meat in your air fryer invest in a cast iron plate that'll fit inside. Preheat it at 400f for around 15-20 minutes then drop your steak in and let it cook on both side for 10 minutes. It Comes out excellent for me.

Sous vide for an hour at 100. Then high temp sear in air fryer until about 5-10 degrees lower than desired internal temp. It comes up afterwards as it rests (which I learned from watching this amazing channel)

This is basically how I cook my steaks all the time. My toaster oven style air fryer goes down to 250° at 110° I start a small cast iron pan on high heat so by the time the steak hits 120° my iron is ripping. Sear the cap then the sides and let rest 5 minutes.
I also cook up whole button mushrooms while the steak is in the oven and I have my pre-made zip sauce to put in top, but I do add the pan juices and resting juices too them too.
Only difference next time, I will use your rosemary salt. I'm excited to try it. I do occasionally butter baste with fresh rosemary, sage & thyme and adds great flavor but steak mostly doesn't need it. It's just something different to do.

You could always put a flat metal or iron pan in the in the air fryer and whack the heat to max (whilst the steak is coming up to temp after the main cook) and then use the insanely hot pan to sear the steak after with the lid off so you aren’t actually over cooking it.

My 1st try at this went very well. Ninja Foodi Grill. Grilling at lowest setting brought temp about 225. Brought steak that had been Kraft Marinated to 98 degrees. Pulled it for 8 minutes & reset Foodi Grill to highest grilling temp & preheated to whatever temp that was. The steak was up to 125-127 in less than 2 minutes I think. Glad I checked the temp, thought is would take longer. My Foodi Grill does not have a probe. Anyway the steak turned out to be about as good as I have ever cooked in the Foodi Grill. Steak was tender & virtually medium rare throughout. 5-stars from me for sure. 1st time to use one of your recipes. Thanks. Going to do it all over again for a second time today.

Ours has a rotisserie - pork roast and whole chicken came out amazing!! Give it a shot!
Start with the steak either fully or partially frozen throughout, and you can get hella more sear on the outside as the inside SLOWLY approaches your desired IT.
That said, you should mind the potential of the carry over internal temp increase always - and pull your cut well before your desired internal doneness.
Most meats are a terrible conductor of heat, and as such, you can roast the hell out of the outside while keeping the inside nice and frosty. Keeping a low internal heat before cooking always gives you options for how much sear you want to get on the cut - especially with cuts that aren't 'bone-in' like steaks.
Pull it and let it rest a bit if you are approaching the desired sear before the desired IT, or let it ride if it is all coming together nicely. Either way, figure your temp and device interaction out with a few tries, and you will have it nailed down ever after.

Ok so I actually if you cook a frozen steak in the air fryer it actually gets an amazing sear by the time the inside gets to temp. I definitely recommend trying it.

When I barbecue I sear the chicken first, then move it away from the fire. Maybe go high first then lower the temp to get the correct internal temps?
