The Tuna Casserole Everyone Should Know How To Make

- It's truly incredible how certain dishes we ate in our childhood and especially comfort food recipes can instantly take us back in time. This Tuna casserole does exactly that for me as I used to eat this on special occasions growing up.
Hurrell Family Tuna casserole Recipe:
8 tbsp unsalted butter
1 large onion medium dice
1/3 cup + 1 tbsp all-purpose flour
6 cups whole milk
4 oz sharp cheddar
12 oz salted canned tuna in olive oil
10 oz frozen peas
1 tsp kosher salt
1/2 tsp fresh ground black pepper
1 lb wide egg noodles of choice
Panko topping:
1 1/2 cups panko bread crumbs
3 1/2 tbsp unsalted melted butter
4 oz sharp cheddar cheese
1/4 tsp Maldon salt

This might sound weird and I'm not even sure it counts a comfort food, but I really miss my Mom's salmon patties on Friday nights. Miss Mom too.

Our family also has a special tuna casserole we all love and fight over my Grandmother’s recipe card.
I was lucky enough to be willed her recipe box when she passed. All my cousins are still so angry over that. I did gain some brownie points this Christmas though. I hand copied out ALL her recipes and sent them in Christmas cards.

Here's my variation on my own mom's tuna casserole from my boyhood. She would have been 103-YO this year. ❤️ Try it! ...
FILLING
2-*3* cans (7 oz) oil-packed ALBACORE or YELLOWFIN (AHI) TUNA , drained (small cans are 4 oz, large cans 9-oz; may have added more than 7-oz - may try olive oil-packed)
1-*2 or 3* jars CANNED MUSHROOMS - Pennsylvania Dutchman jarred OR FRESH/sautéd
8-*16*oz noodles (PROB a POUND of WIDE EGG NOODLES!), cooked, COOLED under running water, & DRAINED
1 1/2 to *2* cups SOUR CREAM (OR creme fraishe - usually added MORE!)
3/4 cup MILK
*1 1/2 teaspoon SALT, to TASTE
*1/4 teaspoon PEPPER, to TASTE
CAYENNE PEPPER, to TASTE
* TOPPING - Double or TRIPLE! *
1/4 cup fine dry BREAD CRUMBS (probably Progresso PLAIN, maybe ITALIAN*; could also use PANKO, or FRESH)
1/4 cup grated PARMESAN cheese
DRY PARSLEY in mix and for topping
2 tbsp melted BUTTER (or olive oil)
*Dried PARSLEY if using Plain (non-Italian) CRUMBS
OPT: PAPRIKA on top
OPT: PARMESAN & DRIED PARSLEY on top
SIDE - Mom would have served a basic lettuce salad with corn oil & white vinegar, salt & pepper - OR (better yet) a SLICED GREEN PEPPER in oil and vinegar, salt & pepper - as the side.
INSTRUCTIONS
Mix topping
Mix TUNA & MUSHROOMS, SALT & PEPPER
Mix filling with al dente noodles and sprinkle with topping. (Mom used a large round clear-glass Pyrex bowl - use a 9x14" Pyrex dish - more surface area for crispy topping!)
Bake at 350° F for 30 minutes.

This casserole looks filling and wonderful and not enough people appreciate tuna casserole.
The most memorable comfort food for me is a straight up Bologna sandwich…white bread, no crust, Mayo on both sides and 2 slices of Bologna cut diagonally of course because it tastes better. For an extra pinch of comfort/nostalgia, I turn on a DCOM. (If you know you know!)

Same here! I don’t eat it often but every now and then I like it to take me back… I like mine with American cheese and a little yellow mustard.

Tuna casserole is a regional dish that people predominantly eat up north. It’s not considered comfort food in the South.

Happy birthday and thanks Sonny. This is an old school meal that my mom also made especially for as she would say, “My Three Sons”. And surprisingly enough it was nearly identical to yours moms. We had this meal through the 50s and 60s along with chicken pot pies on bowling nights weekly. Bless our moms.

Food can have such a strong association with memories of the past. I remember when I was a child in Palestine, one of my fondest memories of food was eating this wonderful hardy pita bread my grandmother used to make in this old wood-fired oven she had in her garden, along with fresh olive oil from the nearby farmlands. We'd dip the bread in the oil, then dip it in some zaatar, and eat it with some tea. Sadly, I can't quite recreate that memory over here in America - the strong taste of the herbs in the zaatar and the unique, deep flavor of the olive oil from back home is just impossible to get with ingredients you find at markets around here. I truly do miss those days.

B-4 I even watch this I have to say, Sonny, tuna casserole is absolutely one of my favorite comfort foods. Yes, my Mom's. All my comfort foods are from my childhood. Especially chicken and dumplings, and I have failed at every attempt to recreate it. America's test kitchen has a recipe for tagliatelle with prosciutto and peas. I've made it many times for friends and family and as a side dish. Could easily be the main course. Never any leftovers. However it reminded me of tuna casserole. So I made it with tuna instead of prosciutto. Magnifico!
