I use Colby Jack usually, and the least time I made mac and cheese I tried it with Colby, muenster, mozzarella, and cheddar (I generally don't like cheddar, but it's not a proper mac and cheese if there's no cheddar imo). It was delicious.

Bechamelted butter with nothing to thicken it or make it creamy, just utter garbage, like the pun I just forced.
Michael Lyndon they used the pasta water to thicken it, however they were not trying to make a roux.
you don't need a roux to make a cheese sauce, it's actually better without it. the starch from the pasta water thickens the sauce.

Actually that is how you do sauces in Italy, you use some of the cooking water, because it contains the starch from the pasta and thickens the sauce.
That's how I make some pasta dishes....of course I definitely use more seasoning and cheese, but yeah. I learned that in my cooking class at school

You add pasta water to a sauce because pasta water is very starchy, it makes the sauce less watery and stick to the pasta better. Try it! Don’t add that much though

Is this a usual thing? I add about 2 tbsp of the seasoned water from boiling potatoes when I mash them... but I've never tried it with pasta. I don't like runny cheese so it never even crossed my mind.
So when you add water(with all the starch that came from the pasta) into the cheese, you are trying to emulsify it(turn it into a sauce). And yes, it's a very common thing in Italian's pasta dishes like, Cacio & Pepe and Carbonara for example.

That’s how the Italian do it! They used the pasta water to make the dish creamer. Pasta Water is Liquid Gold and makes the sauce always better! When you do spaghetti with pesto, than put just a bit of the pasta water to the pesto and put the spaghetti to it. You will be amazed how creamy the whole dish become and how delicious it tastes!
