  • Along with xiaolongbao, yellow croaker noodles is one of the most famous and iconic shanghai dishes. I tried it for the first time with my good friend @maikelaoshi and had the best time learning about this dish with the boss of the restaurant. Such a legend!!!

    The passionate owners are usually grumpy because most customers actually don't understand the effort put into making a dish.
    Making a dish from scratch is definitely difficult. Kudos to the gentleman for insisting on doing his dish this way.

      I grew up around chefs,you can tell they are by how passionately they talk about food. The one's I know are just very passionate people in general and usually really friendly too, really fun to be around. Most I know don't even make a living from it only 3 of the people in my family own restaurants.

      很多这种人。就因为坚持所以一般店面都不大,靠的就是口耳相传。
      我想起了某家饺子店,三十多年了,坚持不开分店。就是因为怕自己顾不全两家店。他家的饺子是我吃过目前最好吃的!真的是皮薄馅大滋味好!生意永远火爆!怀念啊。

    Wow, I am so impressed, and touched by the passion of this owner. He's so proud of his masterpiece and philosophy of how his business should operate. I wish I will have an opportunity to visit his restaurant at some day, not just to enjoy the food but to have a firm handshake with this person.

    "半成品" means processed products. In this context, it means they always use fresh fish meat as ingredients (not frozen, not preserved, probably they buy live fish from the wet market at early morning and make dishes from them) .

      Also the sign only applies to those Vloggers who leave negative reviews to gain views and subscribers. Because those people always go to small family restaurants to describe their foods tasting like crap. Which doesn't make any sense in itself because the restaurants would have ran out of business long ago and they wouldn't have the chance to eat there.

      Being a former chef I have to say “半成品” means pre-cooked food. May be half way may be already fully cooked. So when customer order this dish we simply just heat and go with a little bit garnish finish. I’m not fully disagreed with you, I know what you try to say is more like pre processed food that will be different meaning for the boss wanna to delivery

    I love this guy, such passion. I'm totally with him about the 'do not bring outside food in here'. I worked in hospo for years and I agree that it's a basic principle of life. I'm always amazed that a lot of people don't get it!

    My first morning in Shanghai in 1995, I had 小龙包 and 雪菜肉丝面 in a food street vendor. One of the best I’ve ever had. Noodle was made to order. Stir fried pork and vegetables then noodle was added. I saw the whole process. This is when I realized my root is from China. I grew up in Los Angeles.

    authentic food doesnt have to be served in a fancy restaurant. The owner of the restaurant is honest about what he is serving and open about it. That is the spirit of authentic.

      This boss talks loudly but when it comes to his noodle's quality, you can see he is 200% totally immersed in it❗All fresh, all handmade and no takeways to keep that freshness❗How many boss would do that for their business and customers⁉
