I use the Microsoft To Do list to write down ideas and then cross them out when I make them. But to find them, I'll think of things I know and different framing for those things, look at X for new things, and lots of connect in the know friends share stuff with me which I'll make several vids about. The thing that people don't realize is you can make 10 different pieces of content around the same subject matter, but if the framing is different in each video, the videos will all be novel.
