When you think about it, this has gotta be one of the oldest sports in existence. Long before humans were kicking balls or skating on ice or paddling boats, we were just chasing each other around for fun

This and wrestling. Maybe running, bouldering (or climbing in general) and swimming too, if intensive ways of movement are enough to be considered a formal sport.
Along those lines I once thought about what a decathlon of modernised sports that in some form have existed for as long as humanity would look like. Something like:
1. Parcour: not a team sport rather than WCT but requires similar skillset. Would also have put 100m sprint but due to the limited number of slots, one sport about going fast on land with added obstacles has to be enough to forego the one without obstacles
2. Marathon: go fast but with stamina this time
3. 100m swimming freestyle: go fast but in water
4. Bouldering: go fast but climbing
5. MMA: "free" unarmed combat. I‘m aware that cavemen didn’t do MMA, but this is close enough
6. Kali: combat but with sticks. Humans always had this useful grabbers we call hands and so we would use them
7. Shot Put: throw rock far, simple
8. Weight Lifting: lift heavy thing, also simple
9. Long Jump: jump far, also also simple
10. High Jump: jump high, simple. Also also also
People have probably been doing this since before there were homo sapiens
It's not easy at all playing this at this level. Fitness combined with agility and flexibility is utmost required. Sad that it's not popular
For such a new sport, it's not doing badly. They've got on TV in both the UK and the USA, and been mentioned a few times in both French and German media. The French team that won were invited into a chat show to talk about it.

The sportmanship in this is so pure, and can we all appreciate the cameramen capturing and keeping up with the speed of some of these competitors? It's insane!

One of the best parts of this sport is that it’s so simple, no complicated rules to keep track of, just tag the other person in the given time

Cereal well not really. Anime aren’t like this and they exaggerate way to hard and that’s why we love it. It also depends wich anime you watch.
Actually did rotoscoping in class a few times, you just trace their silhouettes and minor details every few frames and you get something that looks very real without much detail. I’d like to try it on this if I still had access to ToonBoom or some other animation program. My major was game design so I only have the 3D softwares now.

I actually like this, I feel like there’s more tension in this more than any sport.

It's because it's a fast, high risk-reward game. There's no ball, no equipment, no long list of a million rules. It's just 2 people using their strength, agility and ingenuity to navigate a difficult landscape as quickly as possible in order to catch or not be caught. It's simple but fast paced and acrobatic which makes it very fun and interesting to watch.
Just about everyone can relate to the stress of being chased down in a game of tag
