    I put a little salt in the pan with oil to prevent splatter of the oil. Works every time

    Great sauce with the salmon. If you don’t want to remove the skin before cooking it’s simple to remove after browning each side. Just brown on the flesh side first, flip and brown on the skin side for a few minutes and remove to a plate. After a few minutes as the sauce thickens the skin can be easily peeled from the salmon. Place salmon back into the sauce to finish. Simple with great taste.

    This is our absolute favorite, go-to recipe!!! We make it 2-3 times a month, and I used the sauce base for SHRIMP for New Years, and it came out PHENOMENAL!! Love this recipe; love Lidia!!!

    I never had Salmon until around a year ago & it was at a Beautiful Dinner I was invited to. It was Smoked & the best thing I ever tasted. It melted in your mouth & a Chef fixed it. I went back for thirds... I tried to get the recipe

    I will try the sauce. I leave the skin on and put the pieces in the skillet with a bit of oil or butter skin side down. Season it and cover the skillet. The skin is crispy and the salmon is cooked to your preferred doneness.

    Luv this recipe!! It literally melts in ur mouth! Here's a tip if you don't use mustard. Do the same with everything, but hold the mustard and use capers and add garlic.

    I never cut off this flat edge 1:52 when I make salmon (broiled, pan seared) because it gets nice and crispy. That's the best part!

      Yeah it looks better this way and also it breaks up more easily and probably wotjput the skin on, flat edges would simply fall apart on the sauce.

    That skin has so much flavor in it! If you fry the fish skin side down first then flip after 1 1/2 minutes 👌😋😋😋!!! Season that skin with a savory seasoning that you LUUUV on your seafood. The skin has very much flavor; whether it be peaches, lemons, pork, tomatoes, cucumbers, potatoes, etc. Remember - the fresher, THE TASTIER!!! 😋😋😋😋😋😋😋😋😋😋😋😋

    I love mustard and this recipe looks wonderful!!! I had a mustard sauce on Air France and it was so good but not overwhelmingly strong mustard. This is so easy, plus I love salmon. Can't wait to make it.

    that skin was wasted! OMG I wanted that so that I could broil it to a crisp and can share with my pet dog or give to my neighbor's kitty! and so much oil in the frying pan but browned nicely. The end result looked so good!
