RAW VEGAN CHEESECAKE

- Open for the recipe to this easy, delicious, no bake, healthy, raw, vegan cheesecake!
Crust:
1 cup medjool dates
1 cup almonds
1/4 cup coconut
Filling:
2 cups soaked cashews
1 cup maple syrup
1 can of full fat coconut milk
1 lemon
Vanilla
Salt
Toppings:
Fruit, nuts, seeds, chocolate, whatever you want!
(You can also use a food processor instead of a blender)
I used a 6 inch pan but you can use a bigger one and double the recipe if you want!
When you're done making the cake let it sit in the freezer for at least 4 hours. When you're ready to serve, take it out of the freezer about 15 minutes before to thaw out a bit. Store leftovers in the freezer again :)

Hey guys so I forgot to soak the almonds overnight but if you just put them in a bowl with boiled water for about 20mins it works just as well!
i used this recipe 4 times because yeah i couldnt stop making it, best cheesecake i ever had & i always loved cheesecake. eating a slice right now. 🙏🏾💙

Is it? I've tracked for a long time and therefore I was wondering about your comment. So I just tracked this cake and in my opinion it's not really healthy. Relativly yes! For a cake. It has a lot of good fats for example. But bad fats from the coconut as well. And it has really little protein in it. It is low carb. So If you think LCHF ist healthy then it's maybe healthy. I would say it's healthy for a sweet treat but it's still a treat.
Hannah W. Thank you, I agree🙏🏼 50g of cashews is 310 calories (which is just a handful) so once slice of this cake just be 500-600 calories per slice (including the base)
@THE SCHOOL OF ART I did. As I mentioned I've tracked and researched for a long time. Coconut fat is saturated. It's supposed to be a superfood but often something is called a superfood it's not even science based. It's healthier than bacon for sure but you should still not eat huge amounts of it.
I didn't say that this cake is super unhealthy. I said it's healthy in comparison to other treats. But it's not a macro tracker's dream. A macro tracker is happy, when all macros are in a good ratio and in this cake they are not. Only if you want to eat Low Carb High Fat. I don't think calories or sugar or good fats are a bad thing. But it gets unhealthy if it's too much. I just wanted to tell people who don't know much about macros that this cake isn't balanced at all. Small treats don't have to be balanced in my opinion but it's a treat. I've already mentioned that.
Fab recipe. I love the fact that the cheesecake is not only vegan but is gluten free as well. I've been a vegan for years and this is the best & easiest recipe I have found for cheesecake - thank you so much.

The filling is really delicious! I used a splash of vanilla almond milk instead of vanilla extract and an orange instead of lemon. I also used chia seeds and milled flax seed in addition to the other crust ingredients and it turned out great. Yayy love this recipe.
I absolutely loved it! I used raisins instead or dates, because that's just far cheaper and easier to find where I live, and it turned out great! The only thing is that it ended up tasting more like lemon pie than cheesecake, but tasty is tasty!

Omg this was so good. I used 1/2 cup maple syrup cause that was all I had and because of that half lemon juiced. Was perfect. So addicting. Wish I found this recipe sooner.

Thats looks so nice and very yummy ,will give that a try, i use cashews nuts for a full cream, using half cashew nuts and half soya milk and a tiny pinch of salt blend in nutria bullet for one minute omg make perfect cream for anything including your coffee keep in the fridge ,Thanks Elizabeth great video.

This is really good! I've just made it yesterday and it came out delicous! Thank you for sharing. The only doubt I'm having is whether to keep it in the fridge or freezer. Because in the fridge the filling starts to melt so I might just try leaving it in the freezer. Thank you :)
freezer is best! take it out about 15-20 minutes before serving for it to thaw and soften a bit :)

I know this recipe is vegan and won’t taste exactly like regular cheescake but here are my thoughts.
I personally wouldn’t make it again or refer this recipe to other people. The cup of maple syrup was too much and it made the whole cheesecake taste like syrup. (Other vegan recipes only call for 1/2 cup of syrup)
It also wasn’t consistent like regular Cheescake and it tasted more like a frozen smoothie/ ice cream. When you freeze it it’s way too frozen but if you try to let it thaw out it melts. (If you like more if the ice cream taste you’ll probably like it) A recipe where it requires putting the cake in the oven would probably make it more like regular cheescake.
The video itself was made so well and was straight to the point.
In the future I personally will look for recipes that require using the oven and vegan cream cheese, i think this will give it the more regular cheesecake taste I and my boyfriend were looking for.
Hope this review helps I’m not trying to be negative just giving my own opinion!

I figured it would be good frozen in summer, but when it's cooler weather put it in a dehydrator. Honey could be used instead of maple syrup to avoid that flavour. You could add some Brewers yeast to give it more cheesy flavour. Or my favourite would be to add some CBD cheese strain of Pot to the mix, and medicate the cake.

For the Crust you use Almond Meal? (you mixed them yourself?)
For the Filling so happy to see you dont use Coconut Oil but Milk instead! Too many recipes with much oil! I hear Oil can help to set the Filling but obviously your cake stand well?
