  • Quick and Easy Vegan No-Bake Blueberry Cheesecake (Raw Vegan)
    Celine once sang about her heart going on.... And when you love someone, you want to make sure that their heart will go on…beating. So, what better way to celebrate someone you love then my making them a heart-healthy dessert that will not only satisfy their cardiovascular system, but their taste buds as well. This raw, vegan blueberry cheesecake recipe was given to me by a friend, and out of my love for you, I’m sharing it with you here today. Don’t be put off by the “crunchy” sounding title. This is a truly decadent dessert that will make you feel guilty and indulgent even though it’s pretty much just a smoothie in a pie pan.

    Instead of plastic wrap you can use parchment or wax paper for the pie pan☺ and medjool dates are the best for no bake desserts and snacks because they are softer and more pliable. Also if you don't have agave, you can use maple syrup ☺and using unrefined coconut oil will give it the best taste if you like the coconut flavor.

    More beautiful work from you! I make a dessert similar to this with raspberries or strawberries, and now I can't wait to try your blueberry version! Sometimes when I'm trying to be fancy for friends, I'll put slices of berry on top of the plain later before pouring on the berry layer. It looks really cool when you slice it. The other thing I've done to impress company is grind up freeze-dried berries and sprinkle them over the top.

    How long can it stay in the freezer before over-crystalizing or losing texture? Just 2 hours? And how long in the fridge before going "bad"? Max estimates? Thx. Looks great!

    • @MonsonMadeThis
      @MonsonMadeThis  Před 5 lety +1

      Hmmm. It shouldn't really over-crystallize. It'll just get really firm. In terms of how long it will stay in the fridge, I would suggest eating it within 5 days.

    • @MonsonMadeThis
      @MonsonMadeThis  Před 3 lety +1

      I don't know if I would... I think the food processor is really necessary in this instance. you can buy almond meal, and that might be able to form a crust, but I'm not sure how you would blend the dates into it. Sorry.

      Good question. The dates are kind of important here, they add sweetness and hold things together. Maybe some other dried fruit would work? Apricots? Raisins?

    Looks amazing! Unfortunately, we don't use cups for measurement where I'm from. So I wanted to buy an American cup, but found out that they come in different sizes. I get that the ratio is always correct, no matter which cup size you use. I'm just wondering though how to figure out how big the pie dish ought to be ... Any tips? Thank you very much in advance! :)

    • @MonsonMadeThis
      @MonsonMadeThis  Před 3 lety

      There is a standard American "cup", normally they come in a set with 1/2, 1/3, and 1/4... Depending on the ingredient, it's fairly easy to Google the equivalent whether you're looking for a volume or a weight measure. Sorry to make you do extra work. This is an older recipe, before I even considered my channel's reach... I've tried to be more accommodating with newer recipe for other forms of measurement. Thanks for watching! Good luck! Howdy! Dried figs carry a more specific flavor, so although it would probably work in terms of sweetness and texture, I do think that there would be a definite fig flavor throughout. If you've got 'em, it's worth giving them a shot.
