It looks INCREDIBLE. Just a quick note that "uncooked" doesn't necessarily mean raw. This doesn't technically qualify as a raw cheesecake, but I'll be sure to try it out once I go back to regular vegan. 🥰

Do you know if using almonds as an alternative to the cashews would work? I'm allergic to cashews and all the vegan cheesecakes have cashews!

Does it have to be kept frozen after it sets or can i keep it in my fridge?

Omg this was so good. I used 1/2 cup maple syrup cause that was all I had and because of that half lemon juiced. Was perfect. So addicting. Wish I found this recipe sooner. Thank you

Hi Elizabeth and Happy New year! I plan to make your Cheesecake for my daughter birthday..It looks so tasty and Im a huge fan of Dates so perfect! For the Crust you use Almond Meal? (you mixed them yourself?) For the Filling so happy to see you dont use Coconut Oil but Milk instead! Too many recipes with much oil! I hear Oil can help to set the Filling but obviously your cake stand well? Looks very creamy when you cut so you left him outside of the freezer for a long time before? instead of the canned coconut milk ( not raw), raw Thai coconut meat works just fine... you can get it some places in the freezer section, or buy a Thai coconut, and scrape some out of the lid . simple. Then you have an all raw cake...=)

It's healthy and I'm sure it tastes awesome as well, however I have to say that canned coconut milk isn't raw, this is why most raw vegan recipes call for unrefined extra virgin coconut oil instead.
