  • Portuguese Sopas do Espírito Santo
    12 lbs chuck roast without the bone
    A few soup bones
    2 tbsp salt
    1 tbsp pepper
    1 cup vin rose or any pink wine
    ½ cup dry onion
    ½ cup chopped parsley fresh or dry
    2 tbsp ground cumin
    2 tbsp celery salt
    1 tbsp Worcestershire sauce
    1 tbsp garlic purée
    3 8 oz can tomato sauce
    ½ cup pickling spice
    2 heads cabbage quartered
    4 springs mint
    2 loaves French bread sliced
    Place meat and bones in a 12 quart kettle. Add salt, wine,and water to cover about 1 inch above the meat. Marinade about 5 hours. Add pickling spices and the cooked meat for about 2 hours( until the meat pulled apart from the bone). Add remaining ingredients except cabbage and mint. Bring everything to a boil then simmer until meat is tender. Skim some of the fat. Place the quartered cabbage on top of the meat, cover and simmer until the cabbage is tender. Remove pickling spices and discard. Remove meat and cabbage to a serving platter. Taste remaining liquid for texture and salt adding more water if needed. Place sliced bread in a shallow container and pour the liquid over the bread and top with sprigs of mint. This is a easy recipe to make ahead. Taste better the next day when the flavors have blended together.
    Sopas do Espírito Santo Portuguesas
    12 libras de carne assada sem osso
    Alguns ossos de sopa
    2 colheres de sopa de sal
    1 colher de sopa de pimenta
    1 xícara de vin rose ou qualquer vinho rosado
    ½ xícara de cebola seca
    ½ xícara de salsa picada fresca ou seca
    2 colheres de sopa de cominho moído
    2 colheres de sopa de sal de aipo
    1 colher de sopa de molho inglês
    1 colher de sopa de purê de alho
    3 8 onças de molho de tomate em lata
    ½ xícara de tempero para decapagem
    2 cabeças de repolho esquartejado
    4 molas de hortelã
    2 pães franceses fatiados
    Coloque a carne e os ossos em uma chaleira de 12 litros. Adicione sal, vinho e água para cobrir cerca de 1 polegada acima da carne. Marinada cerca de 5 horas. Adicione temperos de decapagem e a carne cozida por cerca de 2 horas (até que a carne se separe do osso). Adicione os ingredientes restantes, exceto repolho e hortelã. Leve tudo para ferver e cozinhe até que a carne esteja macia. Retire um pouco da gordura. Coloque o repolho dividido em quatro por cima da carne, tampe e cozinhe até que o repolho esteja macio. Remova os temperos de decapagem e descarte. Retire a carne e o repolho para uma travessa. Prove o líquido restante para verificar a textura e sal adicionando mais água, se necessário. Coloque o pão fatiado em um recipiente raso e despeje o líquido sobre o pão e cubra com raminhos de hortelã. Esta é uma receita fácil de fazer com antecedência. Prove melhor no dia seguinte, quando os sabores estiverem combinados.

    My Portuguese side migrated from the azore’s and Madeira to Hawaii during the Sugar plantation days back in the American civil war so pretty much all us Hawaiian/Portuguese know are linguica,malasadas and vinha dahlos but I will be making good use of your videos so my daughters know how blessed we are to be Portuguese 🇵🇹🇵🇹

      MY GODMOTHER LURLINE WAS HAWAIIN PORTUGESE: HER MOTHER AND FAMILY MIGRATED FROM THE AZORES IN THE LATE 19TH CENTURY...THEY WOULD LATER SETTLE IN MANTECA, CALIFORNIA.

      @@debraj.guillory-king595 There was quite a number of Portuguese Hawaiian babies named Lurline, after the S.S. Lurline, the Matson ocean liner that sailed between California and the Islands. That name has a long and interesting history.

    Oh i love how you made this recipe..i usually make the same way as you but never with the worsheshire sauce. My famiky never taught me how to make it, i just figured it out on my own by memory of taste. I tried your method this last time that i made it for my family and so many memories came back to me. I plan to sell some the next time i make it because i feel everyone should try it. Also i added potatoes and carrots. Still very delicious and more filling.

    My wife makes sopas using a festa recipe scaled down for six people. The taste of her first batch was good but not quite what we remembered, she experimented around each batch getting better until was almost perfect but not quite there. One day she had an inspiration and sliced the bread three days before and allowed to become stale. That was it, the taste was perfect..

    Being born on Terceira, but emigrated to the USA when I was 11, I remember my mom and aunts preparing and cooking this delicious soup. That said, the first thing that would happen was the killing of a pig, cutting it to pieces, then making linguica. All animals were fatten at home, and vegetables grown at home, and shared by each member of the family. I truly miss those days…

    Long ago I turn my garage into a hall for friends to come over and have my home made sopas, I did this for 25 years but when I retired I quit doing it, I would serve around 25 people But this coming October I once again will make sopas for my cusins ... they request for me to make it..... PS... love your video

    How many quarts is your Instapot?
    How much wine do you use in the marinade?
    How many quarts of water?
    Use crushed tomatoes or tomato sauce or does it matter?

    In my spice bag I put bay leaves, whole cloves, cinnamon sticks, whole cumin, whole all spice and whole peppercorn. Old family recipes. Going have to try pickling spices. Everything else is the same expect we use homemade Portuguese wine

    The fat adds so much flavor and we only have it a few times a year I still keep it in. But I also understand some don’t like all the fat so I cook it the day before and if you like cabbage leave it out till next day. We cook a large pot and separate into two pots so next day we can remove fat from pot that people like this fat. And let those that like more flavor to enjoy.
    Love all your recipes I have not had the guts to comment. But thank you for a lot of recipes similar to what my mom used to make and I was too young to understand how much I would miss them. 🇵🇹

    I think it’s important to note that there is no one single way to make Sopas do Espírito Santo. Between the nine islands of the Azores each island makes it a little different, and even each town further has their own unique recipes.

    Wonderful recipe however the ingredients aren’t Portuguese, we don’t use Pickling spice or Worcestershire sauce, definitely not at all Portuguese not use in our tradition or this soup. Nice recipe though I must give it a try.

    Some of you have ask how much water do I put in my sopas? The quantity of water that is required to cover your meat. I put water, wine and salt and marinade all this. All this liquid goes in to my sopas. You might add more water if you like a lot of juice. Thank you for all the comments.

      A Quanto tempo que você mora no estrangeiro? Quer saber, a minha bis, bisavô imigrou pra USA. O meu bis bis Tio nasceu em Nova York.
      A geração nova continua com o nome português mas bem poucos deles falam Português. Uma das razões, não todos deles casaram com portugueses.
