- Mom’s Jamaican Red Pea Soup | Kidney Bean & Dumpling Soup
1 1/4 cups of red peas (kidney beans) soaked & drained (this equals 1 lb of dry beans)
2 stalks of scallion, chopped
4-5 garlic cloves
7 sprig thyme
1 - 1.5lbs stewing beef
Ham-hock
1 can of Coconut milk
1 sweet potato
1 white yam
1 chocho, diced large (chayote squash)
1 large Carrot
1 Irish potato
6-8 Pimento berries
1 scotch bonnet pepper (habanero pepper can be substituted)
Dumpling spinners - (we recommend 1/2 of Mom’s recipe found below)
Jamaican all spice, ground 1/2 tsp
House seasoning 1 tsp
Salt 1 tsp
12 cups of unsalted chicken stock (more if you like it thinner)
