Oven Baked Jamaican Oxtail | Mom's Oxtail in the Oven, Jamaican Style

Ingredients:
Oxtail - 1 whole
1 whole onion, chopped
1 Tablespoon Garlic, chopped
2 Teaspoons, Dried Parsley
2 Tablespoons Olive Oil
6 fresh springs, Fresh Thyme
1/2 Teaspoon, Pimento ground (also called Jamaican Allspice)
1.5 Teaspoons Browning Seasoning
2 Teaspoons Salt (more if desired)
1 Teaspoon Black Pepper
1 Scotch Bonnet Pepper, kept whole (Habanero can be substituted)
1 Can Butter beans, drained
1-2 Cups Water for braising
Clean the oxtail with vinegar and water. Mix all ingredients together (except except water and butter beans) and marinate overnight.
Preheat oven to 400*.
Place Oxtail and seasonings into a baking dish and spread out evenly. Add water around the oxtail and cover with foil. Bake for 2.5 hours. Remove from oven and add butter beans and mix into Oxtail. Cover again and return to oven to cook a remaining 30 minutes. At 3 hours cooking time test the Oxtail and make sure it is falling off the bones. If it's not, return it to the oven and cook 20-30 minutes more. Enjoy!

I'v been making oxtails for the past 15 years and it never occured to me to stick them in the oven and just let them cook slowly in their own juice!

I prefer lo and slo my friend! 280-300 for 6 hours. The butter beans are amazing!

Hi. If we wanted to add baby carrots and potatoes at what time should we put those in? the same time the oxtails first go in or when we put the beans in? Thank you!
If you decide to put potatoes and carrots I would wait till the last 2 hour mark. Because putting them in while you cook the oxtails will resort in the potatoes and carrots to be over cooked. FYI it’s not considered Jamaican oxtails with the potatoes and carrots. That would be just southern oxtails. But I believe it will add a pizazz to your meal if adding veggies.
I add in spinners to mine. I have heard of some islanders adding potatoes.
@@kekemarie8841 thanks but hmmm that’s weird. The Jamaican spots in my city adds in carrots and potatoes in their oxtails and it’s still Caribbean cuisine. It’s not packed with potatoes and carrots but they are def in there.
Mom always said add whatever you like and make it yours. We’d add it about 1/2 way through cooking so they don’t get mushy. We hope you enjoy this recipe. Have a blessed day!

Hi! When I cooked it, the meat wasn't coming off the bone, and it was a little hard. Was that overcooked? I set it at 400 and cooked it for 3 hours. Should I have left it longer? 2nd time trying. Last time I did it for almost 4 hours, same results. 🤷🏽♀️
Hi! It sounds like your pan was losing moisture. Hard meat would mean it’s over cooked. Maybe try adding more water/broth to the bottom of the pan and make sure it is sealed with foil paper tightly to lock in the moisture. This method is braising the meat which means boiling in liquid 1/2 way up the meat - like on the stove. When you check on it, if needed add more hot water to the pan to keep enough moisture. Be really careful if you’re using a glass pan because they can shatter. We hope these ideas can help you. Keep trying! 💚

Yes let them cook on low for about 6-8 hrs
Hey just thought I'd toss my two cents everything he did was perfect except I prefer to cook my meat at a low temp (275) for about 4 hours. If you follow his recipe and do this I had great results and the flavor was perfect
What about 1Cup of beef broth?

Oh wow. Ive never tried it in the oven. I screwed it up twice on the stove so I was going to try this oven method... thanks for your comment bc now when I DO try it in the oven, I wont put it on 400 😉👍🏿
If you put it below 400 you’ll want to cook it for longer.
