  • Recipe below!After a trip to Arizona, where I was invited to see how they grow and harvest Medjool dates, I was inspired to make a new recipe: Medjool date chocolate layer cake, with cream cheese filling!
    This rich chocolate cake is moist and sweet thanks to the Medjool dates puréed into the batter. A little cinnamon and cayenne give a subtle spice flavour that plays wonderfully against the not-too-sweet cream cheese frosting. Say hello to your next favourite cake recipe!

    • Recipe Information •
    Makes one 2-layer 8-inch (20 cm) cake
    Serves 10
    Prep Time: 25 minutes
    Cook Time: 35 minutes
    The cake will keep, loosely wrapped and refrigerated for up to 3 days.
    • Ingredients •
    Cake:
    1 ½ cups (220 g) Natural Delights Medjool dates, pitted
    2 oz (60 g) dark baking chocolate, chopped
    1 tsp baking soda
    1 1/3 cups (330 mL) boiling water
    ¼ cup (60 g) unsalted butter at room temperature
    1 cup (200 g) packed light brown sugar
    2 large eggs
    1 cup (150 g) all-purpose flour
    ½ cup (60 g) Dutch process cocoa powder
    1 ½ tsp ground cinnamon
    1 tsp baking powder
    ½ tsp fine salt
    ¼ tsp ground cayenne pepper
    Frosting:
    6 Tbsp (90 g) unsalted butter, at room temperature
    1 cup (130 g) icing sugar
    1 pkg (250 g) cream cheese, softened
    2 tsp vanilla extract
    • Directions •
    1. Preheat the oven to 350°F (180°C). Grease two 8-inch (20 cm) round cake pans and line the bottoms with parchment paper.
    2. Place the dates, chocolate and baking soda in a heatproof bowl. Pour the boiling water over the dates and let sit for 10 to 15 minutes to soak. Pour everything, including the liquid, into a food processor (or use an immersion blender) and purée until smooth.
    3. Cream the butter and brown sugar together by hand until well combined. Add the eggs one at a time mixing well after each addition (you may wish to switch to a whisk). Add the Medjool date mixture and whiskin.
    4. Sift the flour, cocoa powder, cinnamon, baking powder, salt and cayenne into the bowl and whisk until well combined. Divide the batter between the two pans and tap the pans. Bake for about 35 minutes until a tester inserted in the centre of a cake comes out clean. Cool the cakes in their pans on a cooling rack for 15 minutes, then tip the cakes out of the pan to cool completely.
    5. For the frosting beat the butter and icing sugar together using electric beaters or a stand mixer fitted with the paddle attachment until fluffy and smooth, about 3 minutes. Add the cream cheese and vanilla and beat on medium speed for another 3 minutes until fluffy and the frosting holds its shape well.
    6. To assemble the cakes, place one cake layer on to a plate or platter and spread or pipe half of the frosting on to the top of the cake. place the second cake layer on top and repeat with the remaining frosting. Chill the cake uncovered until ready to serve.

    Although we live in Canada, my girlfriends grandparents have a place in Yuma. I never knew about the dates so I’ll have to check that out when I’m there next

      @@acryliq It won't burn for a few seconds of holding but that is still hot to the touch at boiling temperature.

    I made this without the spices and used regular cooking dates. It’s a deliciously moist chocolate cake! Thank you for the tip for making cream cheese frosting that’s not loaded with sugar!

    Well, I saved this recipe because I’ve just recently returned to eating dates as a result of trying to remove added sugar to my diet. Whenever I can find recipes that I can eat and still enjoy, it’s a win win. I just made this recipe but made the cake into cupcakes. For a topping I used a little whipped cream on the top of the cupcake. To say it was delicious is quite the understatement. I might make up a small bowl of the cream cheese icing for my husband’s share of the cupcakes. Hopefully, they won’t be too big of a temptation. I highly recommend your trying this recipe in whatever form you choose; it’s definitely a keeper. 👏🏻👏🏻👍👏🏻👏🏻

    Oh Anna what a surprise that delicious harvest! In Mexico, city of Mexicali we have date harvest as well AND season is from September to February.

    Well, but let me tell you that south of the border from Yuma, in San Luis Rio Colorado Mexico, they grow dates also and they have these prepared dates filled with walnuts and condensed milk that are so delicious that your can't have just one. Also in the Palm Springs region they grow dates and have this Date Shakes, so good also!

    Hi Chef Anna, is it okay to substitute Medjool with other date varieties? because Medjool is quite expensive in my country

    My Son orders these dates online ,he gets a big box delivered maybe every couple of months , he eats Medjool dates every morning for the health benefits and vitamins .Can you suggest an egg substitute that would work for this cake ? I’m still eating eggs butter cheese but Mr healthy is strict vegan 😂 To me it’s hard to relearn baking , meaning it’s hard to find baking replacements that still taste good . So are eggs necessary for this cake ?

      You could try with sweet potato, I made vegan brownies and they were delicious, although I suppose that in cakes the texture will change

      Usually flax seed mixed with some water is a good vegan egg replacement. 1 egg = 1 tbsp ground flax seed mixed with 3 tbsp water

    I grew up in Libya (Father was in UK forces) I used to watch the arabs gathering the dates. They would tie a rope between their ankles and then chin up the tree catching the rope on the tree trunk going up and down.
