[Enchantment] is meant for the Enchantment name (all Lowercase and instead of spaces do a _ ) and [Level] is the Level of the Enchantment. Only works on Java Edition and only in Versions 1.13 and above.

From my experience using knockback in superflat worlds it actually does send mobs so far they actually despawn
I actually first knew about the knock back stick from an adventure map done by stamp and squid all those years ago. Now, everytime I start a world with my friends, we always give each other a knock back stick to mess with each other 😂
