Which is the best focaccia?
Genoa and Bari are battling it out for the best, but I have tried both and they are both good.
Today we're preparing something in between the Genovese and the Bari.
High but without cherry tomatoes, then you judge how the recipe evolves
Ingredients for a 20x30 baking tin:
by the way if you want to know how much dough you need for one baking tin, multiply the two sides of the tin you have and divide by 2.5. you will have the weight of dough to fill it. (but if you need to make it taller, as in this case, you will need a bit more)
125 g manitoba
200 g 00 flour
5gr brown sugar
6gr salt
9gr yeast
15gr oil
For the brine
50gr water + 3gr salt
and then another 30gr oil
(and then some sliced meat to put in .....)
