The movie employs several of these transitions where time shifts without cutting, other notable examples are the room emptying after Paul woke up from his coma, or Gurney receiving word from the great houses after Chani stormed off at the ending.

I think the room emptying after the coma is simply him and his mom communicating telepathically, the room turns dark as well I think. Thats how I interpreted it at least.

the room emptying after he is revived from drinking the water is just a depiction of him and his mother communicating. you later see jessica and the high reverend mother communicating this same way (telepathically, but everyone is still in the room). I think the room emptying was just a cool little feature between the two

there is the duel scene with Feyd in the 2000 version in which Paul is literally moving aside very very fast, more faster than the eye can see. Haven't read the book, maybe there we can find explanation for this phenomenon.
