Nice bike man! Can't wait to see how it turns out. I do the same thing with old bikes. Sooner or later, I'm going to have to sell some of them. Lol!

Classic geometry lugged steel frames are just so pretty...

A good restoration will make that look and feel amazing. Even as a gravel bike it is comfortable.

A lot of the old school bikes have 126 mm dropouts. Modern cassettes are usually on wheels that have 130 mm spacing. You can either cold set the frame or you can just squeeze it in there to make it work. Only do this with steel frames. Also, you might need to change the derailleur for more speeds, especially if you're putting the modern wheels on for more reach, but the friction shifters are usually pretty good regardless of how many gears you have on the freewheeler cassette.

Friction shifters are a joy. You can fit them on most cheap derailleurs in my experience. Going beyond 9-ish speed might be tough. 700c rims will be slightly smaller, so you might need a set of brakes that can fit the pads low enough, looking at what you have I dunno if it'll work, unclear.
Love getting and working on old bikes, lots of fun to be had. One thing I will recommend that you just get a decent pair of: pedals. Those old styles will make you enjoy riding your bike a lot less unless you're wearing boots or some shit lol

80s Japanese road bikes are nice! Get some nice soft tape. I would lubricate the cables, but you don't need to replace them necessarily unless they are completely sticking. If the wheels are 27" you can swap them out for 700c most likely. You can find tires, derailers, and 5 speed freewheels online.

A large number of these Japanese lugged 10 speeds are pretty much identical and popped up during a bike boom in the 70s. They are nothing special in terms of value since they made so many like this, but they falt out work and have good reliability. New bar tape, saddle and tires and this bike will be a great performer for many years to come.

Any time you get an old banger, you wanna change the tires, cables, housing, chain, and brake pads. Repack the hubs, BB, and headset....you should probably consider new balls in the races, but it might not be necessary. Depends on the condition....
You can run a cassette with the oem friction shifting, and there might be enough swing in the rear derailer and shifters to cover 9 or 10, but if not, you can just run a 7speed cassette on the 8/9/10 freehub body with a 4mm spacer between the biggest cassette sprocket and the spokes. But if it was me, if those wheels are still spinning smooth and true, I'd keep them...just lube up the freewheel and repack the hubs, put a new set of Schwalbe Marathon 27x1.25" (635x32mm) tires on there, lube those pedals and keep'm, get a kmc z6 chain, and add a set of SKS or PlanetBike fenders to keep your ass dry during commutes. Give that saddle a try before you swap it out; you might be surprised. Only "upgrade" i'd suggest with all the money you'll be saving is a set of bar-end friction shifters b/c stem-shifters are a bit awkward.... but do that before you replace cables/housing b/c the bar-ends will require longer cables than the stem shifters do.
That's an awesome score you got there, regardless of what you end up doing with it...

That seat is probably fine. Had a few like this. Definetly not formated to anyone's behind. There are definitely modern more comfortable ones though. Those friction shifters should work with any similar derailure. That is why I love friction shifters. They just work.

If you change wheels you'll be fine to keep it friction it's a "dumb" system so it doesn't care what caset is on there because you are doing the indexing

What's a new road bike sell for today? You got a good deal there. A little work and that bike will serve you well. I think that lugged steel frame will outlast those carbon fiber beauties sold in the show room today.
