    I believe the Stroppy Stuff is actually quite a bit cheaper than Gunny Juice. 30 Usd for 10ml gunny juice vs 37 Usd for 30ml stroppy stuff.

    Thanks for the review. The product is Ukrainian, and the price is American. The average salary of an electrician in Ukraine is $470. In 2014, I had a salary equivalent to €290, and in 2016 it was equivalent to €140, due to the drop in the exchange rate of the Ukrainian hryvnia against the dollar and the euro. At that time we left to work (live) in Poland

    Thanks for the content. I believe that the difference between the Hapstone CBN plates and the premiums that you reference in the video relate to the abrasive material thickness. The cheaper ones are just plates that are surface coated with CBN abrasive. The premium ones are metallic bonded stones with 3mm thick abrasive layers. These can be used for a lifetime and still keep going, whereas the Start series will wear out quickly, as the abrasive layer is extremely thin. It has nothing to do with the grit rating. In fact, if you finished your sharpening progressions with the surface bearing plates to a very high grit, then introduced the "premium 80 grit", you would bring your mirror or near mirror edge back to a matte, rough finish. That 80 grit metallic bonded stone is extremely coarse!

  • @mosab643
    @mosab643 Před měsícem

    I don't understand what the point is of being so exact when measuring the angle at the start of the sharpening, when it is going to change as you move along the edge of the blade anyway. Since, it is a function of the distance of the section of the blade's edge you are currently at from the pivot point.

  • @grandwonder5858
    @grandwonder5858 Před 29 dny

    So, you can use stones from a different company with this unit? It would fit different sizes and lengths of stones from different companies because the holder is adjustable? If that is the case then I am definitely serious about getting this unit! What concerned me is that a set of blades might cost the same as this unit itself or maybe even more!

    I have the RS and like it, but find it next to impossible to use for narrow knives like fillet etc even with the short screws when doing 15-17 degree angles.
    Is there some solution like different clamps that can solve this?

  • @user-jx1eu8bs9w
    @user-jx1eu8bs9w Před 9 měsíci +1

    I own the venev set and hapstone premium cbn set. I lapped both sets right away. The cbn stones cut alot faster than the venev. The cbn 80 is alot more aggressive than F80 venev. Also the cbn stones are all the same thickness, where the venevs most of the time are not. Both great stone sets. Both definitely need to be lapped with silicone carbide powders. Stroppy stuff works great but for mirrors gunny juice is still best. I just sharpie what micron the strop is on the bottom of aluminum blanks.

    • @NeevesKnives
      @NeevesKnives  Před 9 měsíci

      Yeah I do not find that at all, I can reprofile a knife on the venev, I cannot on the cbn

      @codyshannon24 Před 9 měsíci

      @@NeevesKnivestake the plastic off the stone lol. In the video you were making passes on a knife with the 150 stone having the plastic on still.
      In addition, lapping them makes a world of difference.
      Hope this didn't come off rude. 🙏

    • @cody3078
      @cody3078 Před 7 měsíci

      @@codyshannon24what is lapping a stone? I thought that was to flatten out things like Arkansas stone that wears away more considerably 🤔

    • @codyshannon24
      @codyshannon24 Před 7 měsíci +1

      @@cody3078 you use silicon carbide powder on a glass lapping place to re surface the stone. There is evenly distributed abrasives thru out the stone, so you can un dish and re expose fresh abrasives with lapping.
      Btw.. any resin or hybrid bond stone will perform EXPONENTIALLY better after lapping compared to factory "new".

  • @EdgeStoneKnives
    @EdgeStoneKnives Před 10 měsíci +1

    I think it's an absolute home run of a system but they really screwed up by not including a spring stop collar to keep you from riding the stone up onto the blade. They should at least clearly recommend to people to add that $6 item to their order cause I would never sharpen any blade on any guided system without it.

  • @airadaimagery692
    @airadaimagery692 Před 10 měsíci

    Looks like a real winner.
    I don’t see why you would even need all 4 clamps, even on something like that kitchen knife... Like you said, you shouldn’t be putting very much pressure on the stone to begin with.

  • @Marlonbc90
    @Marlonbc90 Před 7 měsíci

    I'm considering buying the RS, and it looks to me like the cheaper 2 clamps model should work really well even with an 8 inches or 20-22 cm chef knife. Has anyone tested this? Can you tell me if 2 clamps are wobbly for that kind of knife?

    Compared to Workshop Pro? I have the Pro currently and am wondering about this as an upgrade. to me the Pro doesn't hold the knives firmly and the angle difference between one side of the knife and flipping it over is about 1 degree. can you measure the angle on both sides of the knife without readjusting please?

    • @NeevesKnives
      @NeevesKnives  Před 5 měsíci

      no however most sharpeners are going to have a slight difference side to side, as long as its not dramatic its fine, you just want it as close as possible, because knife grinds are different in many cases, even if you cant tell one side might be ground slightly thicker

    Nice review. I was trying to figure out the way to go if I were to get a Hapstone. The R 2 looks like a better clamp than the R S with its little screw pivot, but is that even needed with 2, 3 or 4 clamps on the R S holding the blade. I also cannot really gauge the size difference between the 2 . The R 2 is larger, but how much?

      @@Zpalq Use a marker if you're a beginner. Now you'll know exactly where you need to sharpen. No need to buy junk unless you really think you must have it. But hey, it's your money. Knock yourself out if you think it will help you.

      No one said you NEED it, but rather it's an option. You trade more money for the time and effort required to gain the degree of freehand skill that would be necessary for the same results and consistency. Just because you don't want to make that trade off doesn't mean it's a waste of money.

      @@Ub3rMario Well than pay $300 for what you can just do with an angle guide and a marker. Here's the thing though, you don't gain expertise by doing it like this and there's really no advantage with this if you spend a little time sharpening knives. Start with inexpensive steel that is easy to sharpen, then work your way up to more difficult steels. As long as you don't use knives for field use, in which case you'll need to cart this contraption with you or hope someone is there to help you if you need your knife sharpened.

    Can you use KME stones?

    If your metallic bonded stones aren't cutting fast enough them etch them for about 30 seconds in ferric chloride.

      KKnives Switzerland has one where he uses electrical current to etch them. I haven't tried it yet but seemed to work for him. No chemicals needed.

      Came here to say this as well, I just etched mine last week and my 80gr poltava is nasty. And I use mine dry.

      Yes, i usually etch my stones for 2 to 5 minutes with ferric chloride and that does the trick.
      I use it on both my cbn and diamond stones...
