    Men's Cooking - Paweł Horąży
    Composition:
    - 150 g of wholemeal rye sourdough
    - 250 g of rye flour type 720
    - 2000 g of wholemeal rye flour type 2000
    - 400 ml of water
    - 50 g of shelled sunflower seeds
    - 1 teaspoon of black cumin
    - 1 teaspoon of salt
    1. Multiply the leaven
    2. Mix the leaven with the remaining ingredients and set aside to rise for 12 hours
    3. Pour into a mold and set aside to proof for 2-3 hours
    4. Bake for 30 minutes at 220°C
    5. Remove from the mold onto a rack and bake for another 20 minutes at 220°C
