    I used to work at Wendy's, and we actually used overcooked beef patties for the meat in the chili , we called it "chili meat" LOL. For some reason, we used to sell a crap load of chili when it rained, never understood that phenomenon. Anyways, your recipe is spot on, Thank You for the video...One.

      I was just about to make the same comment I used to work there as a teenager , yep the extra burger patties from the previous night is goes into the next morning chilli, but we never re used a cooked chilli it goes in the trash nightly, so it’s made daily

    Gonna try this! Good tip I’ve picked up when doing a chilli is throw a slug of balsamic vinegar in about five mins before it’s done. Gives it another level of zip between the heat and the tomato base. Keep up the good work my man!

    Another great choice for a very tender meat to counteract the firmness of beef is ground elk. When I grind mine, I add about 10% beef fat, or suet. Mixed with ground beef, it makes beef recipes more tender and adds a bit more hearty meat flavor.

    I have been eating Wendy’s chili for quite a while. In Southern California, we have a restaurant chain called “Corner Bakery“. Their chili is known as big Al’s chili and it is delicious. Or I should say was delicious because it’s no longer on the menu. I never had that chili flavoring pack before. And then one time I got my chili and they had thrown a couple of those packs in. I don’t know if they had gone bad or what, but it tasted like ass. If you really want a good flavor with some spice, add equal parts, Cholula, hot sauce, and Tapatio hot sauce. Combining both of those makes an outstanding hot sauce.

    Wendy's chili meat is tough because it is twice cooked. The beef that goes into the chili already was cooked as burgers that could no longer be served as burgers because they were too old.

    This will be the perfect recipe for a family camping trip late August. Make some baked potatoes, have chips and cheese......we can all eat the chili how we like and it will be enough to serve our big crowd.

    The firm texture of the meat is due to being overcooked. The meat that has been on the grill for “too long” roughly 15-20 minutes minimum is put in a steam drawer, until it can be counted. You count out patties, rinse them off in the sink, then put them in a freezer bag. They are placed in the freezer. When it’s time to make chili, you take the oldest bag of meat and boil it in a large pot to thaw it, then chop it up. And add it to the chili pot.
    The rest of the ingredients are frozen and come pre-packaged.
    It varies between each restaurant, but generally chili meat is treated pretty poorly. We would throw it at each other, sometimes drop it on the floor or in the dish soap, then just rinse it off and put it in the bag to be frozen. Sometimes the chili meat would fall into the grease trap while it was still on the grill, and sit in there from 1pm to 11pm until the grease traps were emptied, when it would be found and placed into the chili meat warmer until the following day.
    So anyways, that’s where that nice firm texture comes from. I think I’ll take this home recipe over Wendy’s any day!

    Yours actually looks better, Jaxx! FYI, i read somewhere that Wendy's uses leftover burgers to make their chili so, that might account for the texture of the meat in their chili! 😊 I've seen other recipes for Wendy's chili, but quite honestly, yours is the first I've wanted to try! 😊

      Hey, Colleen, I have heard the same thing about Wendy's using the burgers. If they are, which would make sense. I would agree with you about the texture. if you like Wendy's I think you should give it a go for sure. Now I'm not saying it's the best chili I ever made but it is the closest I have ever had to Wendy's chili before.

    I worked at Wendy's in high school (many moons ago). I can still make it in my sleep and I also still don't crave it. Ever. The only thing I don't know for certain is what all was in that bag we mixed in. The main "secret" (wasn't a secret at all) was that we used burgers which had been cooked and cooled (almost no grease). Yours looked like an improvement to me.
    If those Spurtles are that cheap, I might get me a few too. 🤔

      Heck yea roger that. I knew that they put leftover hamburgers in there. that's that unique texture I tried to replicate using the ground turkey. What really pulled it together was adding Wendy's chili sauce packs to each bowl, You almost couldn't tell the difference.

      Someone at Amazon has been watching this channel because those spurtles are now just under $30 and although they still look useful four bamboo paddles come out to around $7.50/ea. Just FYI.

    If you have a local Menards, they sell Spurtle sets in wood or silicone. I chose Silicone. I really like them.

    brother you forgot ketchup an mustard . got to remember wendys chili is made from burgers that dint sell . they can scrap of all the topings they want to but there always going to have mustard and ketchup on them . and i think thats why people cant get it right . but hey i could be wrong . your the man brother .

    A huge part of the Wendy's Chili experience is the way the beef is cooked. Texture and the maillard reaction play a large role. Instead of browning the beef make some skinny hamburger patties than break them up into small chunks once fully cooked.

      @@JaxxDrinkwater Have you tried the Ass Kickin' Roasted Garlic hot sauce? If not it's perfect for chili. Give it a try & see what you think. They sell it in a mini-bottle for a couple of bucks so even if it's not to your liking you won't be out much for trying it. Good stuff.

      I don't see any problems with it at all... Although I haven't tried it before... "Real" Wendy's chili doesn't seem to be fatty. This chili I would just rinse the meat with hot water after browning.

    I don't mean this as being critical at all. Maybe it is just the video, but to me, both look to be somewhat watery or thin. More like a soup than a chili. Not saying it ain't good, but just looks somewhat watery to me. I love to add a little handful of oyster crackers to my chili when I eat it. Never had any Wendy's chili to know what it tastes like, as my wife always made our's. I am a newbie with the Instant Pot, so I am just learning and videos such as this add to ideas of something good for me to cook. My wife is still working, but I am retired, so she is letting me cook more and more these days. Thanks for the video.

      Wendy's chili, on it's best day, it not a hearty, thick chili. It's somewhat thin. May not be for everyone, but it's a good crowd-pleasing chili.

      Not sure, I haven't tried it that way. 4-6 hours on low, I would guess. I would love to hear how it worked out if you try it in the slow cooker!

      If you got an Instant pot it is worth doing for sure that and the Pressure Cooker Chili Cheese Dog Chili.. You can't go wrong with either. Thanks for the comment my friend.

    I like the head to head, I had Wendy's a few times growing up, the chili, friostees and their tables I remember. I do chili a lot in the instant pot, always good and easy.

    If I left out the onion would that change the flavor dramatically? I just really hate onion texture but love chili when the onion is super small or (ideally not existent)

      My husband hates the texture of cooked onions as well. Just put your onions in a blender. The onion flavor makes a difference.

      I think it would change the flavor. You could do onion powder instead though.

    I worked for Wendys for two whole days as a Store Manager in training. At the end of my 2nd day, I had a meeting with the store manager who was training me and the area manager on how I was doing, the store manager said I caught on to everything very fast but I complained a lot on how Wendys does things and the Area manager wanted to go over that with me. She told me, it's not a choice on how to do things and If I didn't like it I should just quit now. Now she didn't ask what I complained about and was really rude when talking with me. So, I told her there are Federal and state laws everyone has to follow when it comes to cooking and handling food, and Wendys has to follow those rules or get closed down. I told her I'm not going to quit but I'm not going to put meat in a bucket that sits on a table in the back all day and then put it in the freezer so it can be used to make chili. I was let go right after saying that LOL. That's how much Wendys make it " yes even today" some even have a pot next to the stove because they are too lazy to walk to the back. When a health inspector comes in, they claim it's meat being thrown out because they don't need it for chili. would explain why I got so sick after eating their chili before I worked there. Most of this I got from others that worked at Wendys and a few ex-managers from Wendys I worked within other places. So, Make it at home and be safe.

      If you want it to have more of a Wendy's taste to it, Cook the meat a day ahead and then freeze it overnight. thaw it out by boiling it in shallow water " where the water just covers the meat". It's odd how it works lol

    Every time I make chili it tastes different... I don't why... It just does... It might be that the ingredients change just a tad... But, you are right... Chili is chili... Haha!! Thanks, Jaxx... I might have to invest in one of those instapots.... you make it look so easy ... ;-)

    Not too many Wendy's in my neck of the woods. Closest ones are 1-1.5 hrs away. And I think I've eaten at one only 1 or 2 times and have never had the chili. Have you shared your chili recipe? I have my brother-in-law and nephews coming up for Deer hunting in a few weeks. A good pot of chili would be good. And since I'm asking, do you have an IP recipe for chicken and gravy? Like you would put over biscuits or mashed potatoes. I attempted to make some tonight. It didn't turn out too bad, but both myself and my wife thought it was missing something. And it kinda was. Salt. Trying to watch my sodium intake.
