- Today I am going to show you a day in my life. I am going to show you What I Eat In a Day when Im shooting videos. The easy and cheap vegan meals I'm featuring include: a Peanut Butter and Jam Smoothie, Vegan Thai Fried Rice, and Mushroom Fajitas.

Peanut Butter & Jelly Smoothie:
2 cups almond milk
1 cup raspberries
1/2 cup mango
2 tbsp hemp hearts
2 tbsp ground flax
3 tbsp peanut butter
Add all ingredients to a blender and blend until smooth.
Buy glass straws:
Thai-Inspired Fried Rice:
1 tbsp coconut oil
2 carrots, cut into half moons
1 tsp grated ginger
2 cloves minced garlic
2 heads broccoli
2 red peppers, chopped
2 cups cook
2 tbsp tamari
1 tbsp sesame oil
Roughly 1 cup leftover Thai Basil Beef from my cookbook
Sesame seeds, to garnish
Add chilies if you like heat!

Mexican Rice Bowls!
Rice, beans, salsa, soyrizo, and sometimes vegan cheese!
I find Mexican food the cheapest and easiest to make.
overnight oats with maple syrup, cinnamon, hemp hearts, vanilla almond milk and peanut butter
I literally eat the exact same thing!! Sometimes I'll throw some frozen berries in. So good!

For lunch.... everything microwaved....two tofu pups heated separately, then I warm corn tortillas with orange American cheese melted on it with Siracha and ketchup and then I roll up all of it into special delicious rolls and possibly some low salt potato chips and a kombucha, your cookbook would be loved and cherished if I were to be gifted it, but even if I don’t get gifted the cookbook, I love your channel still the same! ❤️Thanks for the great content and all the hard work that goes into your channel, I see you😍👏🏼! ❤️Kathy

I work in a restaurant so my lunch is free lol. I usually have our daily veg soup if it's vegan, or make myself a quesadilla (we have daiya cheese).
Lunch every single day is a salad with chick peas, tomatoes, kale, butter lettuce, tapanade and avocado. Same exact thing. Every single day. I love it.
Pasta with lots of roasted veggies, nooch, tahini and hemp hearts!!!!! A yummy, filling lunch ALWAYS helps me have a better day. ❤️❤️❤️❤️❤️
My work is taking care of myself, my dogs and my home. My favorite 11:00 am meal is a huge salad with lots of different veggies and beans. Love it...😋
My favourite lunch to take to work is Asian style veggie rolls with a sweet chili dipping sauce!

Oats 40g, vegan protein powder 18g, sultanas 15g, frozen sweet dark cherries 50g, almond milk 200ml, vegan Alpro vanilla yogurt 100g, one spotty banana .... everyday lunch on a work day for years and years , love it!!! 🌱😋

Hi Candice! I typically use my work lunches to get most of my leafy greens in for the day so it's usually a giant salad with lots of nuts, seeds and balsamic vinegar. Then I at least feel balanced no matter what we end up getting for supper. My husband and son get sent with all the leftovers from the night before. I'm a new subscriber and new to the plant based lifestyle, your videos have been ground breaking for me and have really helped make the transition pretty seamless. We're eating healthier but still getting the satisfaction of the occasional indulgent meal. Thanks for the inspiration!

I usually eat, the energy balls you’ve posted, 100oz if water, either a sandwich or noodles and chicken. On the weekends it’ll be a bacon egg & cheese with sauce. All vegan of course lol. Smoothies or celery juice besides water.
Been trying a few of your recipes and I have yet to be disappointed! This one is no different! Thanks for the ideas.

I'm currently a fulltime student and I'm working, so quick meal prep that last several days is my current thing.
Curries, lasagna soup, quinoa bowls, or pasta dishes are my go-to for work days. Filling and warm! I live in Saskatchewan and with spring around the corner I'll be getting into more fresh veggies in wraps and sandwiches paired with homemade soups. Yum!

Veggie tofu stir fry is my fave thing to take for lunch! So easy to make and so good reheated. Such a versatile dish and I never get tired of it. I have been vegan for less then a year and your videos have made the transition so much easier! I’m such a big fan!
Candice, I work nights so anything goes for my lunches because they are at 1 AM usually. Surprisingly, it is usually my biggest meal of my day

I'm a nightshift nurse and my favorite "lunch" is curries or stirfrys with rice! Definitely add some kind of protein such as beans, tofu, or premade gardein products! Super delicious and filling ☺🍚
Can't go wrong with a good old soup for work. It's a great way to use up veggies in the fridge as well and fills you up. Just what I need to give me the energy to teach my class of 9 year olds!

I usually eat my favorite oatmeal for breakfast (boiled with almond milk and cinnamon sticks then with agave, chia seeds, and flaxseeds then topped in a bowl with some fruits, pumpkin seeds and cacao nibs), then some kind of veggie wrap for lunch and dinner changes according to what I have at home to cook. Love this video!
My favourite lunch for school is a loaded veggie sandwich with carrots, cucumber, tomato and grilled tempeh!! Sometimes with s side kale salad and a bottle of juice if I’m feeling fancy!
During a typical day I love to take a quinoa salad with an already cooked sweet potato! It's so delicious and keeps me light to not feel too heavy while working.

I used to believe food bloggers always ate super fancy and expensive meals, but I was totally wrong after watching more of these types of videos! Intermittent fasting is also a favorite of mine because I like working out fasted (plus I've been sleeping in more quite often, LOL) and focusing on other tasks in the morning instead of food. I love eating vegan protein shakes, sweet potatoes, vegetable tikka masala, mixed nuts, Health Warrior chia bars, and 72-77% dark chocolate!

Usually when I have to take my lunch at work, I do a "crudité" salad : I throw a bunch of raw veggies (those days, winter season : carrots, beetroot, black radish, cabbage, spinach, winter lettuce etc...), usually with lentils, chickpeas or quinoa. When I have more times, I sometimes do vegan spring rolls, with an amazing peanut butter/tamari sauce... to die for !

My lunch this week was a large salad situation with several cups of mixed greens, shredded purple cabbage, cilantro, kelp noodles, carrot shreds, blueberries, and grilled tofu with a spicy asian almond butter sauce. Gotta be a little exciting to get through the work day. 🤪

Oh I am completley obsessed with all lunches that can be eaten cold. I spend most of my days in a car so it's nice to not have to look for a microwave all the time. Lately I've been loving buffalo chickpea salad with just a piece of toast or some fresh veggies. So great, filling, and spicy! 😍

I meal prep on Sundays. I usually take some form of a wrap bc it's easy to take and eat. My go to wrap is scrambled tofu, black bean and avocado. Of course, I add my daiya cheddar cheese slice too! When I went vegan over two years ago, you were the first you tuber that I found and I watched and followed. Keep it up! Love your videos!
This week I made a spicy Korean style veggie soup with kombu, gochujang, Korean pepper flakes and more with all the leftover veggies I had in the house and added sweet potato noodles. I also made some rice paper cold rolls with rice noodles, mint leaves, lettuce, cucumber, avocado, mango, and carrots with a spicy peanut sauce. Mmmmm. Getting your book either way haha but love sharing food ideas. You are fun and fascinating. Keep shining!

For lunch at work I’ve been loving baked maple mustard marinated tofu in a sandwich with smashed avocado and lettuce! So tasty, such a good mix of flavors.

I love this. I also work from home AND don't usually eat until 10:45-11 am, so I count that as lunch. And it's usually a breakfast burrito with tofu scramble and veggie bacon in a spinach wrap with whatever fresh veggies I have on hand with sriracha and Tajin 😋

My favourite lunch right now is a bunch of mixed vegetables on top of rice with a peanut sauce. Everything can be made ahead of time and then you just throw it all together.

I want a cookbook!!!! Love your recipes. What I usually have for lunch are leftovers. One of my favorite things to have is a roasted veggie sandwich. Sky is the limit on the veg, a crumble of vegan feta and crusty bread. Perfection.

Excited to try these! For work, I usually bring a variation of tofu and a quinoa base. This is because it’s super simple to prepare the night before and can be eaten hot or cold. For this week I made a tropical fruit quinoa tabbouleh and breaded, baked tofu. The variation I make is usually dictated by what I need to clean out in my fridge also!

Hubby and I both work from home and our frequent lunch is pan fried potatoes, with whatever bean I bulked cooked that week, and whatever veg we have to use up. Sometimes seasoned to be Mexican, sometimes Asian, sometimes Italian, always YUMMY!

I love me a rice bowl. One of my fav is : Jasmine white rice, gardein meatless ground (seasoned and tomatoed), sautéed black beans, steamed corn and guacamole. It’s one of the easiest and tastiest meal ever! :).
