- Here are my 3 easy and vegan sandwich ideas for you! These 3 easy vegan sandwiches are a fun twist on the classics - a vegan Reuben, a vegan caprese and a vegan BLT using smoked tofu instead of bacon. All of these can be made ahead of time and hot or eaten cold, so you don’t have to worry about not having access to a microwave. They are the perfect vegan lunch idea for back to school, school lunches or work lunches.

Vegan Reuben
Russian dressing
1/4 cup vegan mayonnaise
2 cup ketchup
2 tsp white wine vinegar
2 tsp onion finely minced
Pinch of salt & pepper
Stir together in a bowl and set aside.
Sandwich
2 slices rye bread
¼ cup sliced seitan or veg meat of choice
2 tbsp sauerkraut
2 slices vegan white cheese of choice
2 tbsp vegan butter
Vegan Caprese
Vegan mozzarella
4 slices tomato
2 tbsp dairy-free pesto
2 Basil leaves
Balsamic reduction
Balsamic reduction:
1/2 cup balsamic vinegar
2 tablespoons coconut sugar

Delish! My go to vegan sandwich is Dave’s killer whole wheat bread, generous amounts of hummus, baby spinach, sliced red bell peppers, grated carrot, tomatoes, avocado and sauerkraut OMG so good!
that sounds soo good.. I hadn't had a sandwich pile so high of stuffs..I usually just eat a fried tofu sandwich with tomatoes, mayo and pickles. Its tasty and fast for a family of 4. Sandwiches are a great lunch, snack and dinner. I am going to try yours. My kids love avocado!

I love the tofurkey and chao cheese mayo and crispy jalapeños cheese melted with the broiler.

OKay, you just inspired me to make a tempeh reuben! When my husband and I first went vegan 14 years ago, we LIVED on tempeh reubens from our local health food store, where I worked, and where they made them fresh daily. It's been years though! This is so going down this week!

I religiously eat smoked tofu BLT but I used sun-dried tomatoes (cause it is winter here, out of season tomatoes are bad)

I usually make a smashed chickpea and avocado sandwich with a bunch of veggies inside or a classic pb and jelly sandwich with cinnamon, chia seeds and banana inside 😍

I would make a Rachel, with Tofurkey “turkey” slices. Roasted red pepper slices when tomatoes are not good. My fave sandwich filling is mashed chickpeas, diced apples, mayo, and curry powder, with greens on bread.
Yeaaas Reuben style! My local health food store does a vegan hero sandwich, with an olive tapenade. It's amazing!

My go to vegan sandwich is hummus, vegemite (best combo ever btw) some fake meat slices or cooked firm tofu, spinach and preferably on sourdough bread.

@@viintaget6372 I was trying to be universal by saying that lol I don't know where you live but in the UK it's called Marmite. It's like yeast based spread, it has loads of b12 and a nice savoury taste. It can be a bit strong on it's own but I get really creative with it and mix it with different things and it's good. I won some of my colleagues over with the combination with hummus

Oh this is great! I really wanted to learn how to make some good, more artisanal, vegan sandwiches! Currently my go to is just a vegan creamcheese with a seitan salami type sausage, some salt and cucumber. Student life makes it harder to make fancy stuff tho.

When I want it to be healthy nothing beats whole wheat or sourdough bread with hummus and grated carrots. When I'm more in the mood for something more sinful, it has to be soft white sandwich bread with mayo, mustard, cheddar and onions. Not much nutritional value, but so good.
