Emily....I just made this today, I wanted a quick, easy lunch and didn't want plain egg salad as we prepare it in the US. It was delicious and way more satisfying! Yet another thank you! I am 65, and have been following, learning, and cooking so, so many of your recipes for the last maybe 8 years, so much that I almost feel like you are a sister! Thank you for all of the wholesome delicious food!! I eat Korean almost every day now, my diet has shifted gradually to a majority of Korean dishes, over the last 3 years. Gochugaru, gochujang and kimchi of many kinds, (that I make myself of course!) are staples along with many other Korean ingredients, in my pantry! I even believe eating this way has helped fight the cancer I have been fighting for the last 5 years, as for the very 1st time, my last 2 checks have been free of new tumors! I have to think diet is a big influence, many more vegetables and herbs that I never ate before, and LOTS of Korean peppers, flakes, etc! My diet is now more Korean than American, thanks to you and I never have a day without kimchi! Thank you so much and as long as you produce content I will be here trying them all out!!

There is something so delightful about the fact that you are fully in the Mojave Desert, and then just began the cooking process. No need for a reason to be in the Mojave desert, it's just a really cool place to be, and I love that for you! Thanks for the awesome video, it made me smile!
Yum! The salad reminds me of a classic salad from Eastern Europe called "Olivye Salad" (we called it "Russian Salad" in my family). The only differences are Olivye Salad has peas and chopped pickles in place of cucumber. Otherwise, the ingredients are very similar.

You have no idea how sentimental this is for me. There was a bakery at Shilla Hotel in the 80s and 90s that made this. My grandma had a shop in the hotel so we often went to the bakery. It captures so many memories. Thank you for sharing this recipe!

This looks so much like Polish sałatka jarzynowa which has been a comfort food for many generations of Poles, especially during Easter or Christmas :3 Although we add diced apples here, for extra sweetness and crunchiness. And no bread. But I think I'll try jarzynowa as a sandwich one day.

This salad is very popular in Eastern European counties - since the end of 19th century, and they call it "Olivier". Over 100 years, people make it in every home, every family has some differences in the ingredients - many add pickled cucumbers instead of fresh, some add green sweet peas, some don't add onions or carrots, some use crab meat instead of other types of meat (it could be chicken, or ham, or beef - or nothing, just eggs for proteins). For many years, I have been making this salad for quick and easy lunches using cooked cauliflower instead of potatoes 🤣so it is sort of healthy choice.. Except - you can't skip Mayo, but living in the US, I found the perfect Japanese Kewpie Mayonnaise that makes this salad ever better than with regular Mayo..
Western Europe loves potato salad also! You can find it at every German birthday and Christmas dinner. Never thought of putting it in bread though, gotta try it next time!

I love the desert. And I make a sandwich similar to that but I add beans to it also. It is yummy and I use is way less mayonnaise and add mustard I love mustard!
Make sure you wear appropriate shoes in the desert.
